When I saw the response to my high protein chocolate mousse I was floored! I couldn’t believe how many of you asked me for the recipe so quickly.

But I also knew I was onto something. Making mousse from silken tofu is genius. And with Thanksgiving around the corner, I knew I had to make a pumpkin pie version.

Ingredients You’ll Need to Make High Protein Pumpkin Mousse

You’ll need just 6 ingredients to make this delicious no bake dessert, including:

  1. Silken tofu
  2. Pumpkin puree (not pumpkin pie filling – that’s essentially what we’re making)
  3. Brown sugar (see note below for lower sugar options)
  4. Ground cinnamon
  5. Nutmeg
  6. Ground ginger

A Note on Sugar Substitutes

This recipe was tested using brown sugar, but you can also swap in coconut sugar, if you wish.

DO NOT substitute liquid sweeteners, like maple syrup or honey! That will throw off the ability of this pumpkin mousse to thicken into an actual mousse!

How to Make High Protein Pumpkin Mousse

This recipe could not be easier to make. You’ll combine ALL of the ingredients in a blender or food processor, then blend until smooth. Taste and adjust the spices to your liking.

Pour into the bowl, cover, and store in the refrigerator for at least one hour.

After the mousse has thickened, serve with whipped cream and shaved chocolate on top!

Ingredients

Scale
  • 1 package Silken Tofu
  • ½ cup pumpkin puree
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ground ginger
  • Pinch of salt

Instructions

  1. In a high-powered blender or food processor combine tofu, pumpkin puree, brown sugar, cinnamon, nutmeg, and ginger. Blend until smooth.
  2. Pour the mousse into a bowl. Cover and refrigerate for at least one hour.
  3. After the mousse thickens, divide into serving dishes and top with whipped cream and shaved chocolate, if desired. Enjoy! 

Notes

Store in an airtight container for up to 4 days.
