  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • ¼ cup balsamic vinegar
  • 1 tablespoon olive oil

  • 1 garlic cloves, finely chopped
  • 1/2 teaspoon dried oregano

For the bruschetta topping: 

  • 3 ½ cups chopped Roma tomatoes
  • ¼ cup finely chopped shallot (or red onion)
  • 1 garlic clove, minced
  • 1/2 cup chiffonade basil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt

Instructions

  1. Prepare the chicken: Season the chicken with ¼ teaspoon each salt and pepper. Set aside. In a large bowl, mix together the chicken marinade: balsamic vinegar, olive oil, dijon mustard, brown sugar, garlic, dried oregano, and remaining ¼ teaspoon each of salt and pepper.   3. To cook the chicken, spray a large skillet over medium-high heat with nonstick spray. You can also grill the chicken. Once the pan is hot, place the chicken in the pan. Let cook for 3 minutes on the first side. Then add the remaining marinade from the bowl and flip the chicken breasts. Let cook for another 3-4 minutes, until the internal temperature reads 165°F. Adjust cooking time based on the thickness of your chicken breast (the estimated times written are for thinly sliced chicken breasts).
