For the chicken:

  • 1 pound thinly sliced chicken breasts 
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • ¼ cup balsamic vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon dijon mustard
  • 1/2 tablespoon brown sugar
  • 1 garlic cloves, finely chopped
  • 1/2 teaspoon dried oregano
  • 1 tablespoon balsamic glaze

For the bruschetta topping: 

  • 3 ½ cups chopped Roma tomatoes
  • ¼ cup finely chopped shallot (or red onion)
  • 1 garlic clove, minced
  • 1/2 cup chiffonade basil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt

Instructions

  1. Prepare the chicken: Season the chicken with ¼ teaspoon each salt and pepper. Set aside. In a large bowl, mix together the chicken marinade: balsamic vinegar, olive oil, dijon mustard, brown sugar, garlic, dried oregano, and remaining ¼ teaspoon each of salt and pepper. Add the chicken and ensure thoroughly coated with the marinade on both sides. Cover and refrigerate for at least 30 minutes.
  2. While the chicken marinades, prepare the bruschetta topping. In a medium-sized bowl combine the tomatoes, shallot, garlic, basil, balsamic vinegar, olive oil, and salt. Set aside.
  3. To cook the chicken, spray a large skillet over medium-high heat with nonstick spray. You can also grill the chicken. Once the pan is hot, place the chicken in the pan. Let cook for 3 minutes on the first side. Then add the remaining marinade from the bowl and flip the chicken breasts. Let cook for another 3-4 minutes, until the internal temperature reads 165°F. Adjust cooking time based on the thickness of your chicken breast (the estimated times written are for thinly sliced chicken breasts).
  4. To serve: plate the chicken and top with the bruschetta. Drizzle with balsamic glaze on top, plus additional basil.
