Easy Salmon Tacos with Peach Salsa

Taco night is one of our favorite weekly dinners. It’s so easy and versatile, plus who doesn’t love TACOS?! Even my 2 year old now gets excited for taco night!

I love tacos so much (and I mean, who doesn’t?!) because you can customize your fillings based on what’s in your fridge and what your family likes. There are so many great ways to layer flavors and really make a satisfying meal, without slaving over the stove or oven for hours.

That’s why I especially love these easy salmon tacos with peach salsa.

What ingredients do you need to make these easy salmon tacos?

The ingredient list may seem a tad long, but it’s mostly spices that you likely have in your pantry already.

In addition to the spices you only need 4 ingredients for the tacos and 3 ingredients for the peach salsa.

Your shopping list for this easy weeknight recipe includes:

  • Salmon – My family likes the taste of sustainably farmed salmon over wild salmon (sometimes wild salmon can be quite fishy tasting)
  • Onions – I used both yellow and red onions, but you can choose your favorite
  • Bell pepper – any color you wish, or a combination of colors works
  • Avocado oil – Or any mild-tasting oil works too
  • Peaches – fresh or canned work best. And seriously, don’t fear canned peaches during the off season. Look for ones packed in their own juice. 
  • Cilantro – if you’re a cilantro lover. If not, leave it out!
  • Spices, including chili powder, cumin, garlic powder, oregano, smoked paprika, and salt
  • The fix-ins – this includes the tortillas, avocado, and extra cilantro you’d like to dress your tacos with

How to Make Easy Salmon Tacos

I called this recipe “easy” salmon tacos because they are indeed easy to make!

I chose to bake the salmon because

  1. The entire house won’t smell like fish and
  2. It’s more hands-off cooking, which I need as a mom of two little kids (and perhaps you do too).

First, you’ll rub the spices on your salmon filet. Place it in the center of a large sheet pan. Then distribute the peppers and onions around the salmon. Right on the baking sheet you can toss them in some avocado oil and spices – no need to dirty another dish!

Now your salmon is going to bake for less than 20 minutes for an average ¾-1-inch thick piece of salmon. I like to broil it for the last 3 minutes to ensure the veggies are cooked well.

While the salmon is cooking, prepare the peach salsa and your fix-ins. Simply combine the peaches, red onion, cilantro and salt in a medium-sized bowl. Mix together and let sit while the salmon finishes cooking.

How to Serve these Easy Salmon Tacos with Peach Salsa

When the salmon and veggies are done, assemble your tacos. This part is fun to get the entire family involved! I like to put various toppings in individual bowls and let everyone build their own taco. In a flour or corn tortilla, layer in the peppers and onions, salmon, and top with the peach salsa, avocado, and extra cilantro.

You don’t need any fancy equipment for these tacos. You’ll need:

  • Large baking sheet
  • Parchment paper for easy clean up
  • Medium-sized bowl
  • Cutting board
  • Good, sharp knife

Ingredients

For the salmon tacos:

  • 1 lb salmon filet 
  • Spice mix (see below)
  • 1 medium yellow onion, thinly sliced
  • 1 medium red onion, thinly sliced
  • 1 large bell pepper, thinly sliced
  • 2 teaspoon avocado oil
  • For serving: 8 tortillas, avocado/guacamole, additional cilantro

Spice Mix: 

  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt

 

For the Peach Salsa: 

  • ¾ cup chopped peaches (fresh or canned)
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • Pinch of salt

Instructions

For the Easy Salmon Tacos:

  1. Preheat the oven to 375F. Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Mix together spices and set aside. 
  3. Place the salmon filet in the center of the baking sheet. Distribute the peppers and onions around the salmon.
  4. Rub ¾ of the spice mixture on the salmon filet. Don’t forget the sides! Drizzle avocado oil on the vegetables and sprinkle the remaining spice mixture on top. Gently toss the veggies together to coat evenly.
  5. Bake the salmon for 15 minutes. Switch the oven to broil for an additional 3 minutes.
  6. To serve: divide salmon and veggies evenly between tortillas. Top with peach salsa, avocado, and additional cilantro if desired.

 

For the Peach Salsa:

  1. Combine peaches, red onion, cilantro and salt in a medium bowl. Toss together and set aside.
