Easy Salmon Tacos with Peach Salsa

Easy Salmon Tacos with Peach Salsa are an easy weeknight dinner that’s fun and nutritious for the whole family. Spice-rubbed salmon cooks quickly in the oven, without making your entire house smell like fish! Stuff into your favorite tortillas and top with a simple peach salsa for a flavorful meal in less than 30 minutes start to finish!

For the salmon tacos:

  • 1 lb salmon filet 
  • Spice mix (see below)
  • 1 medium yellow onion, thinly sliced
  • 1 medium red onion, thinly sliced
  • 1 large bell pepper, thinly sliced
  • 2 teaspoon avocado oil
  • For serving: 8 tortillas, avocado/guacamole, additional cilantro

Spice Mix: 

  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt

 

For the Peach Salsa: 

  • ¾ cup chopped peaches (fresh or canned)
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • Pinch of salt

Instructions

For the Easy Salmon Tacos:

  1. Preheat the oven to 375F. Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Mix together spices and set aside. 
  3. Place the salmon filet in the center of the baking sheet. Distribute the peppers and onions around the salmon.
  4. Rub ¾ of the spice mixture on the salmon filet. Don’t forget the sides! Drizzle avocado oil on the vegetables and sprinkle the remaining spice mixture on top. Gently toss the veggies together to coat evenly.
  5. Bake the salmon for 15 minutes. Switch the oven to broil for an additional 3 minutes.
  6. To serve: divide salmon and veggies evenly between tortillas. Top with peach salsa, avocado, and additional cilantro if desired.

 

For the Peach Salsa:

  1. Combine peaches, red onion, cilantro and salt in a medium bowl. Toss together and set aside.
