High Protein Pumpkin Mousse Made From Tofu

High Protein Pumpkin Mousse made from tofu is like a spoonful of pumpkin pie filling melting in your mouth, but with a high protein twist! Made from silken tofu, pumpkin puree, spices, and a hint of sugar in a blender, this higher protein dessert is super satisfying if you’re a pumpkin pie lover!

Ingredients

  • 1 package Silken Tofu
  • ½ cup pumpkin puree
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ground ginger
  • Pinch of salt

Instructions

  1. In a high-powered blender or food processor combine tofu, pumpkin puree, brown sugar, cinnamon, nutmeg, and ginger. Blend until smooth.
  2. Pour the mousse into a bowl. Cover and refrigerate for at least one hour.
  3. After the mousse thickens, divide into serving dishes and top with whipped cream and shaved chocolate, if desired. Enjoy! 

Notes

Store in an airtight container for up to 4 days.
