Gluten Free Valentine's Cookies

When I saw the red and pink M&Ms in the store, I knew I had to make my favorite oat flour cookies Valentine’s Day inspired!

Baking is my love language, so it’s no wonder that I get baking obsessed around Valentine’s Day. Whether it’s for my kids, friends, or hubs, you can add so much love through cookies!

I love this recipe even more because it has some heart-healthy swaps (like using oat flour, which makes them gluten free), so you’re not just creating something delicious for those you love, but supporting a healthy heart too!

Making these cookies with your kids is also a super fun cold weather activity. Because the dough requires some chill time, I like to make the dough in advance, and then recruit my kids’ help to add the chocolate chips and M&Ms before baking (so they’re closer to the end result!).

Ingredients to Make Gluten Free Valentine’s Cookies

You’ll need 8 ingredients to make these cookies, including:

  1. Butter is the fat in this recipe.
  2. White sugar adds sweetness to this recipe. If you’d like you can swap in coconut sugar for both the white and brown sugar in this recipe.
  3. Brown sugar adds an extra layer of flavor that’s more robust than the white sugar alone.
  4. A large egg helps these cookies avoid crumbling
  5. Oat flour is used to make these cookies gluten free. See the note below on how to make your own oat flour to use in this recipe.
  6. Baking soda is the leavener in this gluten free Valentine’s cookie recipe
  7. White chocolate chips add a sweet hint of fun!
  8. Pink and red M&Ms add Valentine’s day fun. Of course, you can use chocolate chips or regular M&Ms as well!
  9. Flaky sea salt for topping. Trust me. Don’t skimp on this!! This is the Maldon salt I use.

How to Make Oat Flour at Home

Oat flour is so easy to make! In a high powered food processor or blender (I use my Vitamix), pulse rolled oats until flour-like consistency forms.

Keep going once you think you have flour-like consistency to get it finer. Store in an airtight container in the fridge.

Can I use almond flour?

I have not tested almond flour in this recipe as I have a nut allergy. All of my recipes are 100% nut free.

Can these be egg free?

This recipe has not been tested egg-free or with egg substitutes.

Can you make these dairy free?

Yes – use a dairy free butter alternative to make these dairy free.

How to Make Gluten Free Valentine’s Cookies

This recipe is straight forward to make:

  1. First, mix together the wet ingredients. In a large bowl mix together the melted butter, white sugar and brown sugar until uniform consistency forms. It will look very wet. Then mix in the egg and vanilla extract.
  2. Now add the dry ingredients. Add oat flour, ½ cup at a time, until well-incorporated. With the last ½ cup of oat flour also add the baking soda. Fold in white chocolate chips and M&Ms.
  3. Chill time! Cover the bowl and refrigerate for at least one hour, up to overnight.
  4. Time to bake! When ready to bake, preheat the oven to 350F. Using an ice cream scoop, scoop the dough onto the baking sheet, about 2-3 tablespoons. Leave space between the cookies for them to expand. Bake for 11 minutes until edges brown. Let cool completely on the baking sheet.

How should you store these oat flour Valentine’s Day cookies?

Store in an airtight container for 3 days. You can also freeze the unbaked dough (I suggest rolling into balls first) or freeze the baked cookies up to 3 months.
