Double Chocolate Oat Flour Cookies

It’s been a hot second since I’ve made a new cookie recipe. But I NEEDED some chocolate AND cookies in my life, so these Double Chocolate Oat Flour Cookies came to life!

They were inspired by my original Oat Flour Chocolate Chip Cookies, but on a day I really just needed 100% chocolate in my life.

  • Butter
  • White sugar
  • Brown sugar
  • Egg
  • Unsweetened cocoa powder
  • Oat flour (you can make your own by pulsing rolled oats or quick oats into powder!)
  • Baking soda
  • Chocolate chunks
  • Flaky salt for on top

If “all foods fit,” why do you use oat flour?

I love baking with oat flour because it adds a little extra heartiness to a recipe, but also some extra nutrition. Not that you can’t also enjoy a cookie that’s made with white, all-purpose flour, but I like that I can feed my little cookie monsters at home something with a littttle bit more nutrition.

Plus, I always have oats around, so I know I’ll always be able to make oat flour.

How to Make Oat Flour

Oat Flour is simply oats pulsed in a food processor or high-powered blender (like a Vitamix) until flour-like consistency forms. That’s it. And yes, it’s really that simple.

Why do you use white sugar + brown sugar? Can I use a more natural sweetener.

First, I just want to point out that sugar is sugar is sugar. Yes, some more “natural” sweeteners, like honey or maple syrup, contain some additional vitamins and minerals. BUT, if you’re getting your nutrients from honey and maple syrup, we have a bigger problem.

Next, I do NOT recommend swapping in honey or maple syrup instead of the white and brown sugars used in this recipe. Baking is a science and this recipe was tested using a dry sugar.

What sugar substitutions can I make?

The only substitution I tested was to use coconut sugar instead of brown sugar. It works.

I have an egg allergy – can I use an egg substitute?

This recipe was not tested using an egg substitute like a “flax egg,” “chia egg,” or any of the egg substitute products on the market.

How to Make Double Chocolate Oat Flour Cookies

Baking is therapeutic to me, but only if the recipe is easy enough. These definitely fit the bill…

First, you’ll combine melted butter with the sugars and egg. Mix with a sturdy spoon (<< I always use one like these). Once that’s all mixed together you’ll add in the oat flour and baking soda. The batter will be thick, but not too tough to work with. You’ll fold in the chocolate chips with a sturdy spoon.

These chocolate oat flour cookies do require refrigeration. (Sorry, not sorry.)

If you bake them right away they’ll spread and flatten. Because the butter is melted, you won’t have the structure the cookies need.

Luckily, they only need about 30 minutes in the refrigerator and you’ll be good to go. If you do refrigerate them longer, be sure to take them out of the fridge while your oven preheats so you can scoop them.

Can you believe that these cookies are made in 1 bowl, without a mixer (!!)?! All you’ll need is a sturdy spoon and a great mixing bowl. I like to use a mixing bowl with a lid so it’s easy to pop in the refrigerator and I don’t have to worry about covering it with anything else.

Ingredients

  • ½ cup (1 stick) salted butter, melted
  • ½ cup white sugar
  • ¼ cup brown sugar, loosely packed
  • 1 large egg
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups oat flour
  • ½ teaspoon baking soda
  • ½ cup (or more) chocolate chips or chunks
  • Flaky sea salt for topping

Instructions

  1. In a large bowl mix together melted butter, white sugar and brown sugar using a rubber or silicone spatula. Add the egg and continue to mix together until uniform consistency forms.
  2. Add cocoa powder and then oat flour, ½ cup at a time, until well-incorporated. With the last ½ cup of oat flour also add the baking soda. Fold in chocolate chips or chunks.
  3. Cover the bowl and refrigerate for at least one hour, up to overnight.
  4. When ready to bake, preheat the oven to 350F.
  5. Line a large baking sheet with parchment paper. Using an ice cream scoop, scoop the dough onto the baking sheet, about 2-3 tablespoons. Leave space between the cookies for them to expand.
  6. Bake for 11-12 minutes until edges brown. Let cool completely on the baking sheet.
  7. Store in an airtight container for 3-5 days. Freeze for up to 3 months.
