I will forever stand by lunch dessert. I am lunch dessert’s biggest fan!

Why, you may ask? Well, years ago when I was healing my relationship with food I realized that if I ate something sweet earlier in the day I wouldn’t feel so out of control around sweets at night.

Years later, with a healthy relationship with food, and helping hundreds of women improve their relationships with food, I still encourage lunch dessert and enjoy it frequently myself.

And yes, the nutritious part is an added bonus for lunch dessert. These Chocolate Oatmeal Bites are made with rolled oats, chia seeds, nut/seed butter and chocolate, making them *actually* filling, while also satisfying your sweet tooth.

Ingredients to Make Chocolate Oatmeal Bites

You’ll need just 6 ingredients to make these delicious bites, including:

  1. Rolled oats are the base for this recipe. If needed, make sure you buy gluten free oats. I buy my oats in bulk on Amazon because I go through them so quickly. Just a half cup of oats contains 5 grams of protein (it’s a whole grain) + 4 grams of fiber.
  2. Chia seeds are a tiny addition, but pack a bunch of nutrition. If you don’t have chia seeds in your pantry you can omit them, but you may need to increase the amount of oats you use.
  3. Nut/seed butter helps the bites stick together. You can use ANY nut or seed butter in your pantry. I used sunflower seed butter with no added sugar. I suggest using a nut or seed butter with no added sugar.
  4. Maple syrup sweetens these bites, but if you use a nut or seed butter with added sugar you can omit the maple syrup. The whole recipe only contains 2 tablespoons of maple syrup, so you don’t need to replace it if you omit it.
  5. Chocolate chips are the easiest to melt to add the chocolate topping, but you can also use a chopped up chocolate bar.
  6. Coconut oil is my secret ingredient to help chocolate melt into silky smooth chocolate for this recipe… in the microwave! See the notes below for my technique of melting chocolate this way.

How to Make Chocolate Oatmeal Bites

These bites are so easy to make, which is why I love to prep them as a sweet after-lunch dessert! Dessert prep should be just as much a part of your meal prep as the veggies, grains and proteins – especially if you feel out of control around food.

First, you’ll make the oat base. In a bowl combine oats and chia seeds with the nut/seed butter and maple syrup.

Then you’ll press about 1-2 tablespoons of the mixture into a mini muffin pan. Be sure to spray the muffin tin with nonstick spray first!!

Last, you’ll top with the melted chocolate. See the note below about how to easily melt chocolate in the microwave.

You’ll pop them in the fridge or freezer until the chocolate hardens & then pop them out of the muffin tin.

How to *perfectly* melt chocolate in the microwave

One of my favorite hacks to save time is to melt chocolate in the microwave. To do so, combine chocolate with coconut oil. The oil helps the chocolate melt silky smooth.

Microwave in 30-second intervals, stirring in between, until the chocolate is perfectly melted.

Ingredients

  • ½ cup nut/seed butter
  • 2 tablespoons maple syrup
  • 1 cup rolled oats
  • ¼ cup chia seeds
  • ½ cup chocolate chips
  • 1 teaspoon coconut oil 
  • Flaky sea salt

Instructions

  1. In a medium-sized bowl mix together the nut/seed butter with the maple syrup. Add the oats and chia seeds.
  2. Spray a mini muffin tin with nonstick oil spray. Press 1/2-1 tablespoon of the mixture into each muffin cup until all of the batter is used.
  3. In a small microwave safe bowl add the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until all chocolate is melted.
  4. Add a teaspoon of the chocolate on each bite.
  5. Freeze until chocolate hardens.
  6. To pop the bites out of the tin, use a knife to loosen up the sides. Store in an airtight container in the refrigerator or freezer. Enjoy!
