Chocolate Oatmeal Bites

Chocolate Oatmeal Bites are the perfect poppable, no bake, after lunch dessert bite to prep for the week and satisfy your sweet tooth. Oats, chia seeds, nut or seed butter, and maple syrup create the oatmeal base with a salty chocolate topping.

Ingredients

  • ½ cup nut/seed butter
  • 2 tablespoons maple syrup
  • 1 cup rolled oats
  • ¼ cup chia seeds
  • ½ cup chocolate chips
  • 1 teaspoon coconut oil 
  • Flaky sea salt

Instructions

  1. In a medium-sized bowl mix together the nut/seed butter with the maple syrup. Add the oats and chia seeds.
  2. Spray a mini muffin tin with nonstick oil spray. Press 1/2-1 tablespoon of the mixture into each muffin cup until all of the batter is used.
  3. In a small microwave safe bowl add the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until all chocolate is melted.
  4. Add a teaspoon of the chocolate on each bite.
  5. Freeze until chocolate hardens.
  6. To pop the bites out of the tin, use a knife to loosen up the sides. Store in an airtight container in the refrigerator or freezer. Enjoy!
