As someone living with food allergies for as long as I can remember, I never knew what “monster cookies” were. As a food blogger, however, I’ve been introduced to so many recipes I never knew existed, like Buckeyes and Monster Cookies.

Monster Cookies are typically a peanut butter oatmeal cookie base with chocolate chips and M&Ms.

Having tree nut and peanut allergies, I’ve obviously never had a classic monster cookie, so I knew it was time for me to design my own.

These cookies have a delicious SunButter oatmeal cookie base adorned with chocolate chips and (allergy friendly) colorful chocolate buttons.

I only used red chocolate candies because Valentine’s Day is approaching, but you can of course use any candy-coated chocolate you’d like.

How to Make Chocolate Chip Oatmeal Cookies

Especially during the pandemic, while life has been extra hectic in our house, every recipe I make must be simple. That’s why I love this recipe – you just beat together all ingredients in one bowl (using a hand-held mixer or standing mixer) and then mix in all the chocolate. It’s pretty darn easy!

This is also a small batch recipe, so you only need one large baking sheet.

Just because this recipe is so simple to make doesn’t mean it was so easy to develop. In order to make it easy (and avoid the cookies turning green, which can happen when SunButter interacts with baking soda/powder), I tested this recipe multiple times.

Ingredients

Scale
  • ¼ cup (½ stick) unsalted butter, melted
  • 1 cup No Added Sugar SunButter
  • ½ cup white sugar
  • 1 extra large egg
  • 2 tablespoons ground flaxseed
  • ½ teaspoon salt
  • 2 cups rolled oats
  • ½ cup chocolate-coated candies*
  • ¼ cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl using a sturdy spoon mix together melted butter and SunButter until uniform consistency forms.
  3. Add sugar, egg, ground flaxseed and salt, and continue mixing until combined.
  4. Gently mix in oats, ½ cup at a time, then finally chocolate candies and chocolate chips.
  5. Scoop 2 heaping tablespoons of the cookie dough onto a large baking sheet, then gently flatten with the palm of your hand. Make sure to leave a couple of inches between cookies. Bake at 350°F for 11-12 minutes, until edges are golden brown. Let cool completely on the baking sheet. Enjoy!
