Gluten Free Valentine’s Cookies

These Gluten Free Valentine’s Cookies are made with oat flour, like my favorite chocolate chip cookies, but dotted with pink and red M&Ms and white chocolate chips. They’re chewy, delicious, and easy to make in one bowl!

Ingredients

  • ½ cup (1 stick) salted butter, melted
  • ½ cup white sugar
  • ¼ cup brown sugar, loosely packed
  • 1 large egg
  • 1 teaspoon pure vanilla extract.
  • 2 cups oat flour 
  • ½ teaspoon baking soda
  • ½ cup white chocolate chips
  • ½ cup pink and red M&Ms
  • Flaky sea salt for topping

Instructions

  1. In a large bowl mix together the melted butter, white sugar and brown sugar until uniform consistency forms. Mix in the egg and vanilla extract.
  2. Add oat flour, ½ cup at a time, until well-incorporated. With the last ½ cup of oat flour also add the baking soda. Fold in white chocolate chips and M&Ms.
  3. Cover the bowl and refrigerate for at least one hour, up to overnight.
  4. When ready to bake, preheat the oven to 350F.
  5. Using an ice cream scoop, scoop the dough onto the baking sheet, about 2-3 tablespoons. Leave space between the cookies for them to expand.
  6. Bake for 11 minutes until edges brown. Let cool completely on the baking sheet.
  7. Store in an airtight container for 3-5 days. Freeze for up to 3 months.
