When the temperature cools, I like to bake.

That’s exactly why I made this Vegan Whole Wheat Banana Bread… it was cold, I had some browning bananas, and who doesn’t love the smell of cinnamony banana bread when it’s too cold to go outside?! OK, or any time of year!

This is my sixth banana bread-inspired recipe on this blog, because who doesn’t go bananas for bananas?! (OK, I actually know 2 people who loathe bananas, but I’m still convinced they’re in the minority.)

But seriously, you need to try this Vegan Whole Wheat Banana Bread…

What I love about this recipe is that it couldn’t be easier to make… likely with ingredients you have in your pantry. If not, double check my Pantry Staples Shopping List so you’re always stocked and ready to go! Even better, the entire recipe only has 7 ingredients, and requires just 1 bowl to make.

Personally, I love making this recipe in an 8×8 baking dish. It becomes more like a snack cake that you can cut into squares, instead of a loaf. But you’re warned – if you leave it out on the counter (like we often do with baked goods in our home), it will disappear within 48 hours – if it even lasts that long! It’s just too easy to nibble a little piece here and there!

But this recipe was perfect during some first trimester nausea. I still felt good about getting some extra nutrition (thank you whole wheat flour and bananas, plus no added sugar), and since this recipe isn’t overly sweet, my stomach could handle it. It’s really about the little things…

Since I know I’m going to get asked about substitutions, here it goes… I haven’t tried this exact recipe with other flours, BUT it was originally adapted from my Vegan Chocolate Chip Banana Bread, which is made with oat flour. If you’re gluten free and vegan, I highly suggest you give that one a try for starters.

Then, I have my vegan banana bread muffins that are also made with whole wheat flour. To be completely honest, that recipe is a weeee bit more complicated because it’s made with dates as the sweetener (break out your food processor). This new vegan whole wheat banana bread snack cake recipe is MUCH easier – we’re continually evolving, people.

And while we’re talking about evolving, let’s briefly chat about bananas. Why do so many people think they’re a nutritious foe? Bananas, like all other fruit, contain NATURAL sugar. To be honest, they don’t contain more sugar than another serving of fruit. Yes, they’re lower in FIBER, but it’s all about BALANCE.

Vegan Whole Wheat Banana Bread

Instructions

  1. Preheat oven to 350°F. Coat an 8×8 pan with oil or parchment paper and set aside.
  2. In a large bowl, mash bananas well, but feel free to leave some larger chunks. Then add coconut oil, vanilla, and milk alternative and mix to combine.
  3. Then slowly add the whole wheat flour, baking powder, cinnamon, and salt and mix with a spoon until just combined. Do not overmix.
  4. Pour batter into your prepared pan. Place banana slices sporadically on top (as pictured) or chocolate chips, if desired.
  5. Bake for ~27, or until edges brown and slightly pull away from the sides of your pan. Let cool completely before slicing to enjoy!
