I don’t think I’ve ever felt so peaceful. We’re getting married in a mere two days, and thanks to all the help I’m getting from my mom, I feel calm, excited, a little nervous, and absolutely blissful!

Before I completely check out to enjoy every (live) moment of the weekend and our honeymoon, I wanted to be sure to share this recipe. It’s quickly become one of my go-to recipes to prep each week for a delicious breakfast or snack.

Meet my protein-packed Carrot Cake Blender Waffles!

One of the most exciting registry items we (ok, but really I) received was our waffle maker (affil link)! Although we definitely do not have room for it in our tiny NYC apartment, it’s worth the extra clutter because, well, WAFFLES!

And what a perfect time to share this recipe for this month’s Recipe Redux!

So I know what you’re thinking… “Chelsey, waffles are not bread!” And I know! (Duh!) But I tested my gluten free cornbread twice, and it still wasn’t perfectly fitting the bill, and I ran out of time, because well, wedding thangs took precedent! And deservedly so!

So I’m sharing this Carrot Cake Blender Waffles recipe…

But without the “bread” in this version…

I adapted this recipe from both my protein-packed breakfast muffins and protein pancakes, and YUM!

I’ve been making a big batch on the weekend and then heating them up in the toaster and they’re PERFECT!

Carrot Cake Blender Waffles

  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes
  • Yield: 6 large waffles 1x

Instructions

  1. Preheat waffle iron to medium heat.
  2. Combine all ingredients except for carrots and raisins in a blender, and blend until smooth.
  3. Add carrots and raisins to blender and stir gently to combine. Let batter it for at least 5 minutes to thicken.
  4. Lightly spray your waffle iron with nonstick spray. Pour about 1/2 cup of batter (depending the size of your waffle iron) to the center of your waffle iron. Cook until batter is set (approximately 3-4 minutes, depending on your settings).
  5. Carefully remove the waffle from your iron and let cool on a baking rack, if not eating immediately.
  6. Repeat until all batter is used.
  7. Store waffles in an airtight container in the refrigerator. To reheat, place waffles in a toaster until crispy on the edges.
  8. Enjoy with maple syrup, a dollop of yogurt, fresh or frozen fruit (warmed up), or nut/seed butter!

Notes

Notes: Can also be made into muffins (like my high protein breakfast muffins). Pour batter into silicone muffin tins and bake at 375°F for 15-20 minutes, or until a toothpick inserted comes out clean.
