25 Vegetarian Passover Recipes

It’s slightly harder to follow a vegetarian diet over Passover, but here are 25 Vegetarian Passover recipes to add to your rotation that are wheat free and gluten free.

The eight-day long Jewish holiday of Passover is approaching. During Passover, one may not eat chametz — the collective name for leavened products containing wheat, barley, oats, rye, or spelt. While going gluten free is trendy these days, this religious holiday is about way more than dietary changes.

Why no chametz? I’m no Hebrew school teacher, buuuttt…The Jews made a quick exit from slavery, leaving on their exodus from Egypt without having time to let bread rise. Therefore, Jews abstain from all leavened products – chametz – for the 8 days of Passover.

Personally, I’m not very religious, but I’ve loved the traditions of Passover since I was a little girl. I remember going to school with my matzo sandwich (because we couldn’t eat leavened bread) and waking up to the smell of matzo brei every weekend. Nowadays, I look forward to the family time…and still all of the food that comes around once a year (like my mom’s Apple Matzo Kugel…with such old pictures)!

But being a vegetarian on Passover has more obstacles. Many vegetarian diet staples contain chametz or are considered “kitnyot” and not allowed over passover – no oats, no sunflower seeds, no legumes, and no soy. It’s time to get creative!

That’s why I’ve put together 25 Vegetarian Passover Recipes for you to try.

Even if you’re not a vegetarian, you may want a meat-free meal over the course of the Passover holiday. After all, a vegetarian diet has been shown to be healthy for your heart, brain, muscles, and more.

Plus, vegetarian recipes are typically more plant-forward. We could all eat more plants, so why not try one (or more) of these recipes.

What you need to make Vegetarian Passover Recipes

There are a few pantry staples I suggest keeping on hand to make these vegetarian passover recipes…

Quinoa – Considered kosher for Passover, this SEED (not a grain) is a carbohydrate-rich staple. It also happens to be a complete protein too.

Sweet potatoes – In order to feel satisfied (especially for my usual meat eaters), potatoes are a great vegetarian staple to include in your meals. They’re full of vitamins A and C, plus antioxidants and fiber.

Coconut – This high fat fruit is filling and satiating, which is important when it comes to vegetarian meals.

Spaghetti squash – This pasta swap is perfect for vegetarian Passover recipes. It’s packed with vitamins and minerals too

Eggs – I didn’t say vegan! I said vegetarian, so eggs fit the bill for an excellent protein source. Eggs act as a binder in some recipes, a protein topper in others, and delicious all around!
