It’s a weekly occurrence around here, but it can be hard to think of fun ways to change things up… especially when you focus on healthier, lighter meals in the middle of winter!

As a dietitian, taco night also happens to be one of my favorites because it’s a great meal to bring more veggies to the table. And being the new year, now is the perfect time to add more veggies into your diet to feel good through what you eat.

There’s no need to overly fuss in the kitchen, however. You can make a balanced meal that’s just as nutritious as it is delicious in MINUTES.

Less than 20 minutes, to be exact.

Try these Simple Fish Tacos!

These simple fish tacos are super quick to whip up because fish takes less than 10 minutes to cook! Many people are intimidated by cooking fish at home, but it couldn’t be easier. All you do is throw on a bunch of spices, then broil. Seriously, it doesn’t get easier than that!

Broiled Fish

While the fish is broiling, you can throw together your tangy citrus slaw for a flavorful explosion in every taco bite! The key to make the slaw in minutes is to use a premade slaw mix. I don’t know about you, but who has time for all that slicing and dicing? By using prepared slaw, you can shave at least 10 minutes off your preparation time… that’s money (and time) well spent!

Mann’s Broccoli Slaw is my go-to taco topper (dontcha just a love a good crunch?), and with the bright citrus dressing, you totally elevate taco night with a tangy, but also sweet, note.

And side note – you can save even more time by using premade orange and lime juice instead of squeezing it yourself, but it’s just 1 orange and 1 lime.

Let’s get cookin’…

Simple Fish Tacos with a Citrus Slaw

Prep Time: 10 minutes

Cook Time: 8 minutes

Yield: 4 servings

Serving Size: 2 tacos

Ingredients

    For the fish:
  • 2 8oz (1 pound) skinless flounder fillets
  • 2 teaspoons avocado oil (or olive oil)
  • Spice blend:
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon coconut sugar
  • For the citrus slaw:
  • Juice from 1 orange (~1/4 cup)
  • Juice from 1 lime (~2 tablespoons)
  • 2 tablespoons avocado or olive oil
  • 1 bag Mann’s Broccoli Slaw
  • 1/2 cup roughly chopped cilantro
  • 1 orange, cut into wedges
  • 1 jalapeno, thinly sliced (may omit for children)
  • For the tacos:
  • 8 (6-inch) whole wheat or corn tortillas, warmed if desired
  • Optional: avocado, guacamole

Instructions

    For the Fish:
  1. Preheat oven to broil. Pat fish dry and place on parchment paper-lined baking sheet. Spray or drizzle with oil. Set aside.
  2. In a small bowl, combine spices (cumin, chili powder, smoked paprika, salt and pepper) and coconut sugar. Rub mixture all over fish.
  3. Broil fish for 6-8 minutes, until cooked through. Remove from oven and set aside.
  4. For the Citrus Slaw:
  5. While the fish is cooking, make the citrus marinade by mixing together juice from orange and lime, olive oil, and salt in a small bowl.
  6. Add Mann’s Broccoli Slaw to a large bowl, then drizzle marinade on top. Toss together with cilantro, orange wedges, and jalapeno. Set aside.
  7. To assemble tacos:
  8. Break fish into large pieces and divide evenly among warmed tortillas. Top with Citrus Slaw and add a dollop of guacamole or a slice of avocado on top, if desired. Enjoy!
