Plus, it doesn’t hurt that December is also my birthday month!

But I know that some people find the holiday season super stressful. I’m here to tell you that it doesn’t have to be that way! If you’re hosting the holidays and family you can make things EASY. I’m all about shortcuts and simple tricks that save time, energy, money, and your sanity… especially around the holiday season!

So let’s talk about these sautéed collard greens…

These aren’t your average collard greens. They’re a bright, refreshing dish to add to your holiday table.

And yes, there’s BACON!

And yes, I’m pretty sure this is the first recipe I’ve EVER shared (in 6 years of blogging!) with bacon. WOWZA… how things change!

But here’s the thing… by adding a little bit of bacon, you TOTALLY amp up the flavor. So, if bacon helps you try a new green, I’M IN! Or if it helps you eat MORE greens, I’m IN! You don’t have to have an all or nothing mentality when it comes to health or nutrition.

You can have your bacon and your greens too!

Holiday Greens

Like I mentioned last month, I’m a huge fan of collard greens. But to be 100% honest, if Nature’s Greens didn’t approach me about using this lesser known green for our collaboration, I probably wouldn’t have experimented with it. Sure, I make collard wraps all the time, but it’s nice to get out of my green rut and try something new.

And it couldn’t be easier with Nature’s Greens pre-washed and chopped greens. Seriously, it takes out all the guess work! Sautéing the greens is a great way to try them and you literally just dump them into the sauté pan. Can’t get easier!

Plus, collard greens are full of nutrients. They’re…

  • Full of vitamin K – important for blood clotting and bone health
  • A very good source of fiber – to help keep you bowel habits regular, reduce your cholesterol levels, and decrease your risk of chronic diseases, like diabetes. Fun fact: most Americans don’t eat enough fiber. Aim for at least 30g per day!
  • Rich in antioxidants
  • Anti-inflammatory and have some natural “detoxifying” compounds
  • And more!

Here’s how to make these sautéed collard greens in 4 easy steps:

First, you cook your bacon. You can use regular bacon or turkey bacon. Your pick. I personally prefer the taste of turkey bacon, so I used that.

Then, you sauté garlic and shallots. Make sure your garlic doesn’t burn! Of course, you could use a regular onion (yellow or red) instead of the shallots, but I find shallots to be a bit sweeter. Again, try something new and step out of your veggie rut (onion à shallots), if you’d like. On the other hand, if you have an onion laying around, no need to buy something new!

Next you add in your pre-washed and chopped collard greens. They wilt pretty quickly, so it’s just a few minutes until you’re done. Don’t forget to season with salt and pepper. Taste to adjust the spice to your preference.

Once the greens are wilted, but still bright green (AKA don’t overcook them!), turn off the heat and add the bacon back with the pomegranate seeds.

It sounds like a strange combo, but salty + sweet works, am I right?!

  • 2 garlic cloves, thinly sliced
  • 2 shallots, thinly sliced
  • 4 cups Nature’s Greens collard greens
  • 1/2 teaspoon salt

  • 1/2 cup pomegranate seeds
