Nut Free No Bake Protein Bars

Oh how I love myself a protein bar. Especially if you’re busy (who isn’t?) and on the go (who isn’t?), a protein bar is a great option to have on hand. However, when you have nut allergies it can be hard to find an allergen free option that 1. Tastes good, 2. Isn’t loaded with added sugar.

As a dietitian one of my favorite recommendations to clients are Perfect Bars. I love that they have a whopping 15 grams of protein, some fiber (4 grams) and tons of healthy fats. All that is to say… they’re actually filling!

I modeled these No Bake Protein Bars after a Perfect Bar, but with a nut free twist and way fewer ingredients.

  1. It can be made in one bowl. Any recipe that only takes 1 bowl is a winner!
  2. You probably have the ingredients in your pantry. (I know I did!)

Ingredients to make Nut Free No Bake Protein Bars…

You only need 5 ingredients to make these no bake protein bars. You’ll need…

  1. SunButter
  2. Maple syrup or honey
  3. Oat flour
  4. Protein powder
  5. Chocolate chips
  6. Salt – but I don’t really count that as an ingredient! 

SunButter is the glue in this recipe. It helps all of the other ingredients stick together and adds so much flavor! Personally, I love to use the Organic SunButter in this recipe so I can choose how much salt to add. Plus, I love that it has no added sugar. However, you can use any SunButter variety you choose!

Maple syrup is the sweetener of choice. The entire recipe calls for just ¼ cup. You can use any liquid sweetener that you prefer. I love maple syrup, but if you have honey or agave syrup on hand, those work too!

Oat flour adds oomph and fiber to this recipe. The key with the oat flour is to make sure it’s finely ground. If you make your own, keep pulsing once you think you’ve achieved flour-like consistency.

Protein powder adds the bulk of the protein to these bars, but it’s also used for consistency. I suggest using a vanilla protein powder to add an extra delicious flavor to these bars. If you have an unflavored protein powder at home, that would also work.

Chocolate chips add so much fun to these bars. I mean, who doesn’t love chocolate chips? I love these allergy-friendly chocolate chips that have a high percentage of cacao, so you’re also getting tons of antioxidants too! But you can use any chocolate chips you love. White chocolate would also be delicious in these!

How to make Nut Free No Bake Protein Bars…

This recipe is so simple to make…

First, mix together all of your ingredients to form the dough. It will be thick, but that’s what we want. This is cookie dough-like consistency! 

Then, press into a parchment paper-lined loaf pan. For this step I like to clip down the sides of the parchment paper using chip clips so it doesn’t move. Pour the dough into the loaf pan and then press down using clean fingers. You can also use another piece of parchment paper on top to make it flat.

Refrigerate for an hour or freeze for 20-30 minutes for the bars to set. Remove from the fridge/freezer and cut into 8 bars. Store in the fridge for best consistency.

How to Store these No Bake Protein Bars

If you’re not eating them right away, store in the freezer and move to the fridge on the day you’ll be enjoying them. Be sure to wrap each bar in plastic wrap, wax paper or parchment paper and store in an airtight container for best results.

Ingredients

Scale
  • 1/2 cup Organic SunButter
  • 1/4 cup maple syrup
  • 1 cup oat flour (make sure the texture is super fine!)
  • 1/4 cup vanilla protein powder 
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Instructions

  1. In a large mixing bowl combine the SunButter, maple syrup, protein powder, oat flour and salt. Mix until uniform consistency forms. The dough will be tough. Mix in the chocolate chips.
  2. Line a loaf pan with parchment paper. Press the dough into the pan until flat. Freeze for at least 30 minutes. Cut into 8 bars. Store in the refrigerator in an airtight container. Enjoy!
