Chocolate Nut Free Easter Eggs

In full transparency, we don’t celebrate Easter. And I’ve never had a Reese’s Peanut Butter Egg. But I’ve seen the hype on social media and the love people have for these peanut butter filled eggs with a chocolate coating. 

So I figured, I can do that too… with a nut-free twist!

And while I can’t compare it to the original, I do know that my version of these nut free easter eggs are:

  1. Damn delicious
  2. Made with wholesome ingredients
  3. Fairly simple to make

From what I can tell from the packaging (I have allergies to tree nuts and peanuts, so I can’t try the original for comparison), Reese’s peanut butter eggs are a thickened peanut butter with a thick chocolate shell. So that’s exactly what I set out to make when I created my version of a nut free easter egg!

While I was testing these nut free peanut butter eggs a couple of times I decided to add a slight twist to them. I wanted to thicken up the filling a bit so I decided to add Rice Krispies to the mix. HANDS DOWN, a GAME CHANGER!!!

I know I keep saying that I’ve never tasted the original, but these have got to be better! 

Plus, knowing that they’re made with ingredients you can recognize and that help you feel good helps me feel good too. Of course, there’s nothing “wrong” with the original, but who doesn’t love a healthier twist that’s just as satisfying (if not MORE)?!

Ingredients You’ll Need to Make Nut Free Easter Eggs with SunButter

My favorite part about this recipe is that you really only need 6 ingredients. Any you may even have all of these ingredients in your pantry right now (!!). I love that when I find a new recipe, don’t you?

You’ll need:

  1. SunButter
  2. Ground flaxseed
  3. Oat flour
  4. Rice Krispies
  5. Chocolate
  6. Coconut oil
  7. *Optional* sweetener

Let’s break ‘em down…

SunButter is obviously the base of this recipe.

It’s a necessity to make this recipe nut free. I used both the No Added Sugar and Organic versions when testing this recipe and they both worked great. You can use ANY SunButter variety you’d like, but I’d actually stay away from the Crunchy version because it will distract from the crisped rice crunch. They’re different crunches, ya know?

I used the SunButter varieties with no added sugar because I personally found these sweet enough without any added sugar in the filling. I know, it’s supposed to be a candy, so if you want them sweeter try the Original Creamy or Natural versions.

Pro tip: Be sure your SunButter is mixed well so it’s not too oily!

Ground flaxseed and oat flour will thicken the filling.

The original Reese’s eggs have a thicker filling than regular old peanut butter, and that’s the consistency you need in order to make a really good nut free easter egg. Many recipes for homemade versions use coconut flour, but I think that imparts a slight coconut-y taste to these chocolate SunButter eggs.

Instead, using a combination of ground flaxseed and oat flour has an undetectable flavor, but will still thicken them up. See substitutions below.

Rice Krispies add an airy crunch you’ll love!

Seriously, this is what Reese’s eggs are missing (I think!). It’s just an added layer of texture that I personally think is VERY needed in an otherwise spoonful of thickened SunButter coated in chocolate. It makes the eating experience so much more satisfying, in my opinion! 

Chocolate and coconut oil make for the perfect chocolate coating.

I’ve shared this hack before many times on my blog, but the secret to the best melted chocolate – without a double boiler – is combining chocolate chips (preferably minis because they melt faster) with coconut oil. The result is a silky smooth chocolate that coats anything like a dream. 

Coconut oil also hardens when cold, which is how I suggest you store these, so it’s perfect! And no, you cannot detect the coconut flavor from refined coconut oil.

Last, you can add an optional sweetener, if you wish.

As I mentioned, the filling does not have any sweetener, however, you can add 1-2 tablespoons of honey or maple syrup, if you so choose. Alternatively, use a sweetened form of SunButter (like the Creamy or Natural varieties) for a slightly sweeter filling.

How to Make Nut Free Easter Eggs 

There are a few steps to make these Chocolate Nut Free Easter Eggs…

  1. Create the filling
  2. Form into eggs
  3. Coat in chocolate
  4. Let them harden and enjoy!

First, we’ll create the filling.

In a bowl combine SunButter, ground flaxseed, oat flour, and Rice Krispies. Make sure all of the ground flaxseed and oat flour are thoroughly mixed in so you cannot detect them. The SunButter mixture should thicken at this stage. If your SunButter is particularly runny add a bit more flax or oat flour 1 tablespoon at a time. 

Next we’ll form the filling into eggs.

Use a cookie scoop or ice cream scoop and scoop a heaping tablespoon of the filling. Using your hands form into an egg shape. You could also press the filling into a silicone mold if you want, but I like doing it freeform. It adds to the wholesomeness of these homemade chocolate candies. You’ll make 8 eggs total.

Now we’ll melt the chocolate and coat the eggs in chocolate.

This is where things get a little messy. I admit I’m not the best at working with chocolate – AND YOU DON’T HAVE TO BE EITHER! 

Add the chocolate and coconut oil to a microwave safe dish. Microwave in 30-second intervals, stirring in between, until the chocolate chips are melted and it’s silky smooth. Hold the SunButter egg on a fork and dip into the chocolate. Use a spoon to coat the top. When completely coated, place on a parchment paper lined baking sheet. Repeat until all of the eggs are coated in chocolate.

Use the remaining chocolate to create a drizzle on top. You could also do the drizzle in white chocolate, if you choose.

Last, let the chocolate SunButter eggs set in the fridge or freezer.

I’m a fan of them frozen, but if you want a softer filling, pop them into the fridge.

How should you store these Chocolate SunButter Easter Eggs?

As I mentioned above, I personally love to store these Nut Free Easter Eggs in the freezer, but you could also store them in the fridge. I don’t think they’ll last very long!

  2. Using a cookie scoop or ice cream scoop, scoop a heaping tablespoon of the filling into your hands and mold into an egg shape. You could also press the filling into a silicone mold if you’d like. Make 8-10 eggs total.
  3. Add the chocolate and coconut oil to a microwave safe dish. Microwave in 30-second intervals, stirring in between, until the chocolate chips are melted and it’s silky smooth. Line a baking sheet with parchment paper.
