It’s getting HOT out there, so get ready for ALL the frozen treats! Is there anything better than a frozen treat to cool down after hours of fun in the sun?

I didn’t think so!

As much as I love getting soft serve from Mister Softee (vanilla with rainbow sprinkles, thank you very much!), I also like to have some healthier frozen treats available (hello banana ice cream!).

The newest healthy snack on the block is this SunButter Frozen Yogurt Bark!

This healthy snack idea is packed with protein and healthy fats, so it will keep you full for much longer than an ice cream cone would… although there’s a time and a place for everything in a well-balanced, healthy diet!

I especially love this snack because I can share it with my son. He looooves yogurt, and I love introducing him to a new way to enjoy it. There are endless flavor combinations you can make or toppings you can sprinkle on (scroll down for more ideas!) using the basic recipe I’m sharing below.

Ingredients in SunButter Frozen Yogurt Bark

You only need 2 main ingredients to make this SunButter Frozen Yogurt Bark…

Greek Yogurt or Skyr is the base of this recipe.

I used full-fat plain yogurt the first time I made this frozen yogurt bark to serve to my son (I try to avoid added sugars where possible).

Research finds that full-fat dairy may be the better choice, nutritionally speaking. It was long thought that full-fat dairy products increase your risk of heart disease, however, some studies are showing that this is just not the case.

The next time I tested this recipe I used nonfat vanilla yogurt for my husband (that’s his favorite), and honestly, I liked the plain version better! It had a tang to it that I enjoyed and without the fat, the frozen yogurt can become a tad icy. Regardless of the health implications, I recommend using the yogurt that you like best!

I do recommend using a Greek yogurt or skyr, however, because the thicker consistency provides a better texture compared to watery plain yogurt, AND packs more protein to keep you full.

Organic SunButter adds additional creaminess and even more flavor.

The healthy fats found in SunButter are so satisfying. I often find that having a spoonful of SunButter cuts sweet cravings, so I knew I wanted to add it to this frozen yogurt bark. I mixed it into the yogurt AND drizzled it on top because can you have too much SunButter? If you know me, you know I don’t think so!

Coconut oil helps make your SunButter extra drippy for drizzling on top.

Plus, coconut oil hardens in cold temperatures, so it works really well for frozen treats.

How to Make SunButter Frozen Yogurt Bark

So with your small handful of ingredients, this SunButter Frozen Yogurt Bark really only takes a few hands-on minutes to make.

First, mix the yogurt and SunButter together. You can also mix in honey or maple syrup if you’d like it a bit sweeter or use vanilla yogurt. I omit the liquid sweetener when intending to serve it for my son, but I try not to stress over it.

Then spread the yogurt onto a parchment paper-lined baking sheet. Be sure not to spread it too thin so that it’s “bark-like.”

To get the perfect drizzle on top, mix together SunButter and coconut oil. If it’s not drippy enough, microwave it for 15 seconds, then stir again. Drizzle the melted SunButter on top.

THAT’S IT!

OK, so that’s it for the most basic version… BUT you can have fun and get creative with the toppings you add…

Fun (Optional) Toppings

In the name of simplicity, I want to say that the basic version is DELICIOUS! It’s packed with protein and healthy fats and will keep you full as a snack. And it’s refreshing.

But if you did want to amp things up a bit, you can do that too!

Here are some of my favorite toppings:

  • Mini chocolate chips or drizzled melted chocolate
  • Coconut flakes
  • Sliced strawberries or bananas (or any fruit you’d like)
  • Sprinkles (because FUN!)
  • Granola
  • Crushed pretzels (you know, for the salty and sweet take)
  • Cocoa rice cereal
  • Anything you’d like!

Ingredients

  • 2 cups plain whole milk Greek yogurt or Skyr
  • 4 tablespoons Organic SunButter, divided
  • Optional: 1 tablespoon honey*
  • 1/2 teaspoon liquid coconut oil

Optional toppings: chocolate chips, granola, cocoa rice cereal, sliced strawberries or bananas, coconut flakes, crushed pretzels

Instructions

  1. Line a small baking sheet with parchment paper. Set aside.
  2. In a medium-sized bowl mix together yogurt and 3 tablespoons SunButter. If you’d like, add a tablespoon of honey or maple syrup to sweeten it.
  3. Spread the yogurt mixture on the parchment paper-lined baking sheet until it’s about ½-inch thick.
  4. In a small bowl, mix 1 tablespoon SunButter with coconut oil until smooth. Drizzle the SunButter on top of the yogurt. Scatter desired toppings on top.
  5. Freeze for about 2 hours, until hardened.
  6. Once completely hard, break into pieces to enjoy! Store yogurt bark in a freezer-safe container or bag the freezer.

Notes

*Note: Omit the honey if serving to a child under 1 year old.
