Nut Free Easter Eggs

Nut Free Easter Eggs are an allergy-friendly alternative to traditional Reese’s eggs, with a special tasty twist! Made with just 6 ingredients, these SunButter-filled eggs are coated in chocolate for a sweet treat everyone will enjoy. Happy Easter!

Instructions

  1. In a bowl combine SunButter, ground flaxseed and oat flour. Mix until uniform consistency forms. Then add in the Rice Krispies. The mixture should be thick and easy to mold into an egg shape. 
  2. Using a cookie scoop or ice cream scoop, scoop a heaping tablespoon of the filling into your hands and mold into an egg shape. You could also press the filling into a silicone mold if you’d like. Make 8-10 eggs total.
  3. Add the chocolate and coconut oil to a microwave safe dish. Microwave in 30-second intervals, stirring in between, until the chocolate chips are melted and it’s silky smooth. Line a baking sheet with parchment paper.
  4. Coat the eggs in chocolate: Hold the SunButter egg on a fork and dip into the chocolate. Use a spoon to coat the top. When completely coated, place on a parchment paper lined baking sheet. Repeat until all of the eggs are coated in chocolate. Use the remaining chocolate to create a drizzle on top. You could also do the drizzle in white chocolate, if you choose. Place in the fridge or freezer to harden. Enjoy!
