I’ve yet to find a protein bar that I genuinely love. Whether it’s the chalky texture, fake ingredients, lack of filling nutrients (like fiber + protein), I can come up with LOTS of better-for-you snacks.

But there’s something SO convenient about a protein bar, so I’ve been making my own. Since I created this recipe I’ve thought of TONS of different flavor combinations to make, but haven’t followed through just yet… That is until now!

But I see marshmallows & chocolate chips… are these HEALTHY??

Great question! Since there’s no true definition of HEALTHY, it’s a bit hard to answer this question.

However, I define HEALTHY as nourishing your body AND soul.

Healthy food is food that supports how you want to feel. If you’re like most of the moms I work with, you want to have more energy, stop thinking about food all the time, and feel confident in what you’re eating.

Well, in that case, these S’mores Protein Bars ARE healthy because they are…

  • Packed with protein
  • Contain some fiber
  • But also nourish your soul if you’re in the mood for something sweet (but not too sweet) – I even love these as a dessert!

I purposely minimized the added sugar (aside from the add-ins) because I wanted to keep these low sugar. When you cut this batch into 8-12 bars, you’re getting 1/2 tablespoon of marshmallows, which is like 2 mini marshmallows! If you don’t have room for 2 mini marshmallows in your diet, then it may be time to evaluate your relationship with food.

A note on protein powder…

I’m not a fan of adding protein powder to EVERYTHING, but I do think there’s a place for it, like in this recipe.

I used collagen in this recipe for a few reasons…

  1. It’s unflavored, so it mixes effortlessly into the bars without changing the flavor or texture.
  2. The flavor is super fine. This means there’s no chalkiness to the texture
  3. I eat other sources of protein, so I don’t need to worry about “complete proteins” (tl;dr collagen is NOT a complete protein, but if you eat a variety of other proteins this really isn’t something to even acknowledge)

How to Make S’mores No Bake Protein Bars

This recipe could not be easier. First, mix together all of the ingredients in a large bowl. It will take some time to fully incorporate the protein powder and oat flour. Keep going! You’ll be done when the texture is like play doh.

Then add your mix ins. It may be difficult to work them in, but do your best.

Last, press the dough into a lined loaf pan. Refrigerate and then cut into bars. Wrap them up to keep fresh the longest.

How should I store the protein bars?

These bars are best stored in the refrigerator. They’ll last for about 5-7 days.

Ingredients

Scale
  • 1/2 cup nut/seed butter
  • 2 tablespoons maple syrup
  • 1/2 cup unflavored protein powder (I used collagen)
  • 1/2 cup oat flour (make sure the texture is super fine!)
  • 1/4 cup mini chocolate chips
  • 1/4 cup mini marshmallows
  • 1/4 teaspoon flaky salt (for on top)

Instructions

  1. In a bowl mix together nut/seed butter, maple syrup, protein powder + oat flour. Fold in the chocolate chips + marshmallows.
  2. Pour into a lined loaf pan + press down with your fingers. Sprinkle salt on top.
  3. Refrigerate for 30 minutes, then cut into bars. Store in the fridge.
