The Super Bowl is around the corner! As much fun as it is to watch the game, I’m all about the SNACK SPREAD. And who doesn’t love individual cups of a delicious Mexican-inspired dip that takes just MINUTES to assemble?!

Whether you’re attending a Super Bowl soiree or hosting, these cups are sure to be a party hit!

Traditionally, 7-layer dip contains refried beans, guacamole, sour cream, salsa, cheese, onions, olives and tomatoes. But since the Super Bowl is just days away, I slightly deviated from the traditional 7-layer dip to SIMPLIFY (my word of the year). I used one of my favorite shortcuts – pre-made guacamole from Wholly Guacamole!

Let’s be honest – as much as we love avocados, they can be unreliable! It can be tough to time avocados jusstttt right for a party (like the Super Bowl).

Get this fact – according to a recent survey*, 38% of Americans have wanted to make guacamole on Game Day, but weren’t able to because their avocados weren’t ripe! How crazy is that? I know I’ve been there before… or at least been a part of the 70% of avocado users who have to throw away part of the avocado because it wasn’t usable. I hate wasting food, so relying on pre-made guacamole is a no brainer!

Since my word of the year is to SIMPLIFY, using pre-made guacamole from Wholly Guacamole saves me a good 10-15 minutes off my prep time since they do the heavy mashing for you. I’ve said it before, and I’m sticking by my guns, there’s nothing wrong with semi-homemade entertaining! Especially if it buys you more time to spend with friends and family while watching the big game.

Even though I’m all about simplifying, I’m not about to sacrifice flavor. These 7 Layer Dip cups are still packed with SO MUCH FLAVOR, even with a healthier twist (because hey, we’re at Chelsey Amer Nutrition).

Here’s what you’ll find in these Individual 7 Layer Dip Cups:

Refried Beans – Pack in a plant-based protein punch with canned beans. The savory flavor makes the perfect base to these Individual 7 Layer Dip Cups.

Wholly Guacamole Classic Guacamole – I scooped guacamole straight from the easy peel-and-serve guacamole trays into each individual cup (they’re also perfect to pair with your favorite veggies and chips!). Wholly Guacamole is available nationwide at select stores and online at Walmart.com and MexGrocer.com.

Plain Greek Yogurt – Instead of sour cream, I opted for a healthier twist: Greek yogurt. Greek yogurt contains much less fat and more protein than sour cream, but still just as much thick, creamy texture. For a dairy free or vegan version, try coconut yogurt.

Pico de Gallo – Instead of spending hours chopping my own tomatoes for my 7-layer dip, I opted for store-bought pico de gallo. Check the ingredients to be sure you can recognize them.

Freshly Grated Cheddar Cheese – I always opt for a block of cheese when using cheese in a recipe, so it’s grated fresh, and with fewer ingredients (no de-caking ingredients that can be found in bags of shredded cheese). To make this recipe dairy free, use a dairy-free cheese.

Green Onions (Scallions) – Brighten up the flavor of this dip with some fresh greens. You can also sub cilantro, if you’d like.

Crushed Tortilla Chips – Whether you add crushed tortilla chips on top or use tortilla chips to scoop up this dip, the salty crunch is perfect in this recipe!

Individual Healthy 7 Layer Dip Cups

Ingredients

  • 1 15oz can refried beans
  • 1 package Wholly Guacamole Classic Guacamole
  • 2 6 oz containers plain Greek yogurt
  • 1 12 oz container Pico de Gallo or medium salsa
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions, thinly sliced
  • 1 cup tortilla chips, crushed

Instructions

  1. Using 4 ounce cups, layer refried beans, Wholly Guacamole Classic Guacamole, yogurt, and pico de gallo. Top with grated cheese, green onions, and crushed tortilla chips. Serve with sliced veggies or tortilla chips. Dig in!
