OK, OK, so I know it’s still 90+ degrees in most of the country, but it’s September, and that means FALL to me!

Plus, I got a taste of delicious fall weather on my trip out to California a couple of weeks ago, so now I am SO ready!

Fall is also the start of the Jewish holiday season, kicking off with the Jewish New Year – Rosh Hashanah! Part of welcoming the “sweet” New Year is with family gatherings, including meals focused on apples and honey (symbols of the sweetness to come).

Growing up, my mom always tried to include apples, honey, and other forms of sweetness in as many ways as she could for the holiday meal.

That’s probably why every year I love thinking of newer ways to include these delicious and sweet flavors in dishes.

This year, I’m excited to share this fall spinach and apple salad with a honey vinaigrette… because it still is WAY too hot to turn on the oven!

(Although, if you want to try, my Gluten Free Apple Honey Cake is a GREAT idea!)

Plus, I always think that holiday tables never have enough veggies (because YES, they can be delicious!), so why not carry the theme of the meal through the veg?!

While this salad is “fancy” enough for a holiday dinner, with such an assortment of ingredients, it’s also great to prepare for lunch or dinner on a regular old Monday (or Tuesday, or…).

This salad is full of textures and flavors that will actually SATISFY you…

Fresh baby spinach

Chewy dried cranberries

Crisp chopped apples

Spicy fennel

And hearty lentils

It has a hint of sweetness, but it’s well-balanced, thanks to apple cider vinegar!

Fall Spinach and Apple Salad With Honey Vinaigrette

Ingredients

Scale

For the salad:

  • 1 pound organic baby spinach
  • 1/4 cup dried cranberries
  • 1/2 cup chopped apple
  • 1/2 cup julienned fennel
  • 1 cup cooked lentils

For the dressing:

Instructions

  1. Combine all salad ingredients in a large bowl. Set aside.
  2. In a small bowl or mason jar, combine all dressing ingredients. Mix until well-combined.
  3. Before serving, dress salad and toss together until all the greens are coated. Enjoy!
