The Jewish New Year – Rosh Hashanah – is around the corner!

If you’re not familiar, the Jewish New Year is similar to the American New Year. It’s time to reflect on the past year, start fresh, and ask for forgiveness from those you have hurt in the past year [until Yom Kippur – the Day of Atonement – 10 days later].

We celebrate a SWEET New Year with apples and honey…

And that’s exactly what this gluten free apple honey cake represents!

The Jewish holidays also represent the kick off to FALL for me! Growing up Rosh Hashanah was always within the first month of school starting, so it was a time to get back into routine and spend some sweet time with family.

Even though we’ve had quite the heat wave (and it feels nothing like fall), and even though I’m not going back to school as a student, it still feels like a BIG transitional time.

Personally, we have a very busy, but exciting, 2 months coming up… I’m traveling a lot for work and fun, it’s my hubby’s birthday at the end of the month, and I’m gearing up for a BIG transition right here (more details on that coming soon!).

But before I get ahead of myself, I’m focusing on family time for the holidays!

A few years ago I shared an Apple Honey (Zucchini) Cake recipe that is full of sweetness and whole grains.

It’s still absolutely delicious, but 4 years have passed, and I love experimenting with more food allergy-friendly recipes, for both my clients and personally.

Since my brother in law is 100% gluten free, and I go back and forth with a gluten free diet because of digestive troubles, it was time to make a festive holiday treat, G-free!

And I just so happened to follow my own tips on modifying a recipe to fit any dietary needs. Look at that!

Here are some of the adaptations I made to this Gluten Free Apple Honey Cake…

It’s Gluten-Free.

That means I had to find a G-free flour (or combination) that would allow for an airy texture that’s just as delicious as the original. Thank youuuu coconut and cassava flours! 

Cassava flour comes from yucca, a root vegetable. Coconut flour is from coconuts. Either on their own in this recipe would be too heavy or gummy, so I thought the combination would work beautifully (and it did!).

As a perk, coconut flour is high in fiber, so that helped offset the lack of whole grains in this recipe. Gluten free recipes are notoriously LOW in fiber, so using coconut flour is a great way to get a fiber boost!

It’s Lower In Sugar.

Many clients concerned about their blood sugar control celebrate Rosh Hashanah, so I wanted to make a recipe that they could 100% enjoy. Plus, I just don’t think all the sugar in the original recipe was necessary.

My Apple Honey Cake is FULL of sweetness, thanks to the apples, honey, and sugar in the original recipe, so I wanted to maintain a similar level of sweetness even though I was trying to cut down on sugar.

Plus, I didn’t think the recipe would miss much if I just cut some of the sugar… I simply used a tad more natural sweetness from the apples to compensate!

Hint: It worked! 



I Cut Down the Ingredient List.

More than ever before, life has gotten BUSY. For me, that means simpler cooking and baking. That’s why many of my recipes are using fewer ingredients… with just as much flavor!

Sure, that meant forgoing the added veggie boost from the original recipe, but I think for simplicity it was worth it!

Dare I say that I like this gluten free apple honey cake version MORE than the original?!

Yup, I went there!

Gluten Free Apple Honey Cake

Instructions

  1. Preheat oven to 350°F. Coat a circular cake pan with oil. Set aside.
  2. In a small bowl, combine all dry ingredients — flours, salt, baking soda, and cinnamon. Set aside.
  3. In a large bowl, beat eggs well. Add honey, applesauce, oil and vanilla. 
  4. Slowly mix in dry ingredients until just combined. Then mix in apples and raisins.
  5. Immediately pour mixture into your cake pan.
  6. Bake at 350° F for 25-30 minutes. A toothpick should come out clean. Let cool on a wire baking rack. Drizzle with honey before serving [optional].
