One of the most common questions I receive is “What do you eat for… (lunch, dinner, snacks)?” That’s one reason I share my weekly What I Ate Wednesday over on my Instagram stories.

Well, believe it or not, I sometimes find it hard to keep meals fresh and fun in my real-world eats too! I can see the US Weekly headlines now: “Food bloggers, they’re just like us!” It’s totally true!

But when many of my friends don’t know what they want to eat, they simply dial up Seamless to order in or go pick up something. I find it so much harder than that – thank you allergies!

When you have food allergies or intolerances, you need to have so much more trust when someone else prepares your food. Sure, it can happen, but since I enjoy cooking, most of the time I find it so much easier and so not worth the hassle of ordering in.

Add the summer heat, and turning on the oven is becoming less and less of an option these days. (Ya feel me?!)

So I scrolled back in my recipe archives and remembered how much I loved making summer rolls!

Unlike crunchy spring rolls, summer rolls are made with rice paper wrappers, which are softer. I opt for using brown rice paper wrappers for just a tad more fiber in each bite. You can probably find them in a local Asian or specialty market or order them online. Word to the wise though, the brown rice paper wrappers are a little more delicate than the traditional white rice variation… but equally fun to play with!

Throw in ANY leftover veggies and proteins, then whip up this SunButter dipping sauce, and you have a brand-spanking new meal!

I haven’t always been the biggest fan of leftovers, but I’m genuinely obsessed with these easy summer rolls to redefine leftovers… we can call them RIGHT-overs!

And the best part of this recipe?! This SAUCE!!!

I pack my husband lunch about 2-3 times per week, and it’s usually the same ol’ boring salad. He doesn’t complain, but I know those aren’t his favorite lunch days. I surprised him with a few of these summer rolls in there with a side of this sauce, and got RAVE reviews!

Some people surprise their husbands with gifts, my gifts are in the form of food!

I am so lucky that when I started dating my husband, he quickly gave up all tree nuts and peanuts since it’s not safe for me. Along with no longer snacking on nuts, he doesn’t eat any Thai food or peanut sauces.

So you know I’m a huge fan of SunButter, and now I want to let you in on why.

SunButter has about the same amount of protein, fiber, and iron compared to peanut butter or almond butter, but MORE vitamin E and magnesium than other nut butters. Easy Summer Rolls with SunButter Dipping Sauce

Ingredients

For the dipping sauce:

  • 1/4 cup SunButter, no added sugar
  • 1 1/2 tablespoons coconut aminos (or low sodium soy sauce)
  • 1/4 cup + 1 tablespoon water
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground turmeric
  • 1/8 teaspoon smoked paprika
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon red chili flakes

For the summer rolls:

  • 8 brown rice paper rolls*
  • 1 cup julienned cucumber
  • 1 bell pepper, thinly sliced
  • 8 kale leaves (or another leafy green)
  • 1 avocado, sliced

Instructions

  1. In a small bowl combine all ingredients for the dipping sauce. Mix together until smooth and drippy consistency forms. Taste, and add more red chili flakes for additional heat, if desired. Set aside.
  2. To assemble the summer rolls, fill a shallow dish with water. Place 1 rice paper wrapper in the water until it softens, about 15 seconds. Remove from the water and place on a flat surface. Add 1 kale leaf, then layer vegetables and avocado on top. For each roll, I used 3-4 slices of each vegetable. Wrap your summer rolls as you would a burrito – fold in the shorter sides first, and then roll lengthwise.
  3. Continue until all ingredients are used.
  4. Slice the summer rolls in half and serve with dipping sauce. Enjoy!

Notes

*Notes: For a lower carbohydrate version, you can use collard greens as the wrap instead of brown rice paper rolls. For a tutorial, read this post.
