Have you ever made popcorn bars before?

To be 100% honest, I never had, but popcorn is one of my all-time favorite snacks, so it’s about time I added popcorn to a dessert!

Since my go-to popcorn snack bowl usually has a spoonful of SunButter on the side (and most of the time a spoonful of mini chocolate chips sprinkled on top), it’s about time I combined all of my favorite foods into one delectable dessert!

You seriously will LOVE these nut free Chocolate Popcorn Bars!

The end result of this no bake dessert is crispy popcorn coated in salty SunButter topped with a thick chocolate layer on top.

Ingredients Needed to Make This No Bake Dessert

You only need 5 ingredients to make these easy no bake bars!

You’ll need:

  • Popcorn
  • Natural SunButter (I like that there’s some sweetness added)
  • Butter or a non-dairy alternative
  • Chocolate chips
  • Coconut oil (to help the chocolate melt)

How to make Chocolate Popcorn Bars

This no bake dessert is so easy to make. You only need 20ish minutes start to finish.

First, pop your popcorn. I used my go-to brown paper bag method (below), but you can always use pre-made air popped popcorn.

How to Pop Popcorn in a Brown Paper Bag

Making popcorn at home is SO EASY… and you don’t need to turn on the heat on your stovetop or get a fancy popcorn maker.

All you need are some popcorn kernels and a brown paper bag. Yes, the kind of bag your mom used to pack your lunch for school.

For this recipe add 1/3 cup popcorn kernels to a brown paper lunch bag. Fold down the top and microwave for about 2 minutes (time will vary based on your microwave).

After about 30 seconds you’ll hear the kernels begin to pop. Stop the microwave when there’s about a second between the pops. You don’t want it to burn! Burnt popcorn smells awful!

Back to how to make these no bake bars…

OK, so now that we have about 5 cups of air-popped popcorn we can continue making the popcorn bars.

In a large bowl (use the biggest you have) mix together melted butter with SunButter until completely combined. Add the popcorn to the bowl and carefully mix together until the popcorn is completely coated in the SunButter mixture.

Then, transfer the SunButter popcorn mix to a parchment paper lined 8×8 baking dish. Parchment paper is really key to prevent sticking! Using another piece of parchment paper on top to press down the popcorn so it’s packed in tight in the baking dish.

Last, pour melted chocolate over the top. I always mix my chocolate with some coconut oil and microwave in 30-second intervals, mixing in between, until silky smooth.

  • 3 tablespoons unsalted butter
  • ¾ cup Natural SunButter
  • ¼ teaspoon salt
  • 5 cups air popped popcorn (about 1/3 cup kernels)
  • 1 bag mini chocolate chips
  • 2 teaspoons coconut oil

Instructions

  1. Line an 8-by-8-inch baking pan with parchment paper. Set aside.
  2. In a large bowl mix together butter with SunButter and salt until uniform consistency formed.
  3. Add popcorn and carefully mix together until popcorn is completely coated.
  4. Transfer the popcorn mixture to the lined baking dish. Using a new piece of parchment paper, press down the popcorn mixture into the dish. Remove the parchment paper on top.
  5. Melt chocolate chips with coconut oil in the microwave in 30-second intervals. Mix together in between intervals until completely melted and smooth. Pour chocolate on top of the popcorn. Spread it evenly on top.
  6. Refrigerate bars for about 20 minutes, or until chocolate hardens. Cut into 12-16 squares. Enjoy!
