I cannot believe 2021 is coming to a close! What a year! To celebrate the end of another amazing year, let’s look back and countdown the top 21 of 2021, including recipes and blog posts, along with my personal favorites…
Almost 365 days in the books for 2021, so it’s time to look back on the year!
Chelsey Amer Nutrition had its best year yet, helping more women than ever break free from food rules and learn to trust themselves once and for all. Through my self-paced online course, the Nutrition Training Program, and 1:1 clients, more women learned what works for them when it comes to what they eat and how they treat their bodies. I’m beyond grateful that this is what I get to do for work!
Even more, I hosted several challenges and workshops throughout the year… and plan to bring even more content to you in 2022. If you want to be kept in the loop, be sure to join my mailing list!
And more… we created over 40 new recipes, partnered with some incredible brands and products that I truly love, and shared 18 informative blog posts on the blog alone (plus countless other recipes shared on Instagram too!). Thank you to the brands who partnered with Chelsey Amer Nutrition in 2021!

Chelsey’s Favorite Recipes of 2021
I always find it interesting to learn what recipes are blogger’s favorites throughout the year. As food bloggers, we create a lot of recipes (most food bloggers make way more than I do)… so which really rank at the top of the list?
The 5 recipes below are my personal favorites from the newest 2021 additions to the Chelsey Amer Nutrition recipe collection.
1 . Vegan Chocolate Cream Pie with Oreo Crust
Vegan Chocolate Cream Pie is made in an Oreo crust for a delicious combination of silky smooth chocolate mousse and the classic Oreo flavor everyone loves. This chocolate dessert is a chocolate lovers dream, yet light enough that it just melts in your mouth. As a bonus, the chocolate mousse filling is made with high protein tofu to help balance your blood sugar.
This is by far one of my favorite recipes that I created in collaboration with SunButter this year.
2. Sheet Pan Turkey Meatloaf
Moist and flavorful Healthy Turkey Meatloaf is a simple weeknight dinner that only takes 10 minutes hands on time! As a bonus, I turned a family favorite into a complete sheet pan meal, so you can cut down on prep time and clean up time with this healthy dinner recipe.
3. Oil Free Granola
Oil Free Granola is a delicious, crunchy granola recipe that’s made with SunButter instead of oil. As a bonus, it’s a 100% nut free snack and a low sugar granola recipe too!
This is my go-to granola recipe these days. I even plan on making a double batch for when the baby arrives in January to have on hand for snacking!
4. Mushroom Chicken Meatballs
Mushroom Chicken Meatballs with no breadcrumbs are an easy weeknight dinner with a simple twist to help you eat more veggies. As a bonus these gluten free meatballs are made with no breadcrumbs or fillers. Serve with pasta, spaghetti squash, over salad or on a meatball hero!
These were so flavorful, easy to make, and a family hit, so they had to make the list! I hope you try them if you haven’t yet!
5. Crispy Baked Eggplant Fries
Crispy Baked Eggplant Fries are a fun way to eat more veggies! With a crisp high fiber whole wheat breading and smoky eggplant inside, these baked eggplant fries are a great snack or side dish. They’re even toddler approved!
As much as I loved my Cake Batter Dip and Oat Flour Chocolate Chip Cookies (two recipes I make ALL the time in my own kitchen), when a recipe gets my picky toddler to eat almost an entire eggplant, it’s a WINNER and one of my favorites!
