There I was, mixing together this flourless chocolate cookie dough batter – inspired by my Flourless SunButter cookies – thinking “I’m not too sure about these… will they really work?!” And surprising to me – they did!!!

Of course I tested and retested to make sure these cookies *actually* continued to “work” and each batch has been better than the last… so to say I’m excited to share this recipe with you is an understatement!

Each bite is like chewy brownie edges with extra chocolate woven throughout… without the hassle of making an entire batch of brownies and only having a few pieces with edges!

I’m all for shortcuts when it comes to baking and cooking, but only if they don’t skimp on flavor and satisfaction – that’s the most important to me. Sure I can always make 3-ingredient cookies but will they actually be satisfying? Probably not! (There’s a reason most delicious cookies are made with butter, flour, and sugar!)

Needless to say, this recipe has a short ingredient list, but it doesn’t skimp on flavor or satisfaction!

Ingredients to make Small Batch Flourless Chocolate Cookies

You only need 3 ingredients to make these cookies, but 5 ingredients truly elevates these cookies. You’ll need:

  1. Chocolate SunButter
  2. Granulated sugar
  3. A large egg
  4. Salt
  5. Chocolate chips or chunks

What is Chocolate SunButter?

OK my friends, it’s only the greatest invention to come out of the SunButter kitchen in years! 

If you’ve been a long-time follower of my blog, you know I’ve been working with SunButter for years. (You can check out some of my favorite SunButter recipes here.)

Earlier this year they released a CHOCOLATE SUNBUTTER that tastes like chocolate icing. A spoonful satisfies most of my chocolate cravings, and I love that I’m getting some nutrients in too (although NOTHING wrong with some plain straight up chocolate too).

My favorite part is that there are just 6 ingredients per jar: Roasted Sunflower Seeds, Sugar, Unsweetened Chocolate, Cocoa Powder, Salt, and Vanilla Flavor.

There’s no weird stabilizers or anything like that in there. For years I made my own chocolate sunflower seed butter, but honestly, SunButter knocked this one out of the park so I don’t need to waste my time doing that anytime soon!

My favorite ways to enjoy Chocolate SunButter are…

  • By the spoonful
  • In baked goods – like these cookies (recipe below) or this mug cake
  • Added to an oatmeal bowl – like this brownie oatmeal bowl – YUM!
  • With apple slices for an afternoon snack
  • Straight from the jar with pretzels (the salty + sweet combo is soooo good… trust me!)

Ingredient Swaps

I have not tested any ingredient swaps for this recipe, so I don’t know for certain if they work.

  • You could try to use coconut sugar, but the taste will be slightly different. I like the standard flavor of white sugar in this recipe.
  • You cannot use liquid sweetener, like maple syrup or honey
  • I have not tried a plant-based egg substitute. The egg does provide a lot of structure to these cookies and some of the chewiness, so I would not suggest swapping out the egg.

How to Make Small Batch Flourless Chocolate Cookies

With only 5 ingredients and no chilling time for the dough, this recipe really is quite simple to make…

First, mix together Chocolate SunButter, granulated sugar, egg and salt until combined. The batter will be very sticky. This is OK!

Pro tip for measuring your SunButter: spray a measuring cup with nonstick oil spray before measuring. This way the Chocolate SunButter will slip out without sticking to the measuring cup.

Next, fold in chocolate chunks. I like to chop chocolate bars for this recipe to create uneven pieces. However, you can also use any chocolate chips or chocolate chunks.

This is the type of cookie dough batter that’s best scooped with a utensil. Not just a spoon and rolled between your hands like chocolate chip cookies. I used an ice cream scoop because I wanted fairly large cookies, but you can use any size cookie scoop you’d like (just cook for less time).

Place the cookies at least 2 inches apart on the cookie sheet because they will spread as they bake. I suggest sprinkling with extra flaky sea salt or kosher salt on top because it truly elevates the chocolatey flavor. 

The cookies are done when they’re fully set on top and don’t appear wet anymore, about 11-13 minutes.

Now here’s the kicker: let the cookies completely cool on the baking sheet. Don’t transfer to a wire cooling rack or anything like that. Let them cool completely because they’ll get chewier as they cool.

Holiday Variations to Try

It’s the holiday season, so in case you want to jazz up your cookies even more, here are some variations you may wish to try to enhance these flourless chocolate cookies…

  • Chocolate Peppermint Cookies: Mix in a drop of peppermint extract and sprinkle crushed candy cakes on top
  • White Chocolate Chip Chocolate Cookies: Use white chocolate instead of semi-sweet or dark chocolate
  • Butterscotch Chip Chocolate Cookies: Use butterscotch chips instead of chocolate chips

A few key kitchen tools make this recipe much easier to make. 

You’ll need:

  • Parchment paper
  • Measuring cups
  • Nonstick oil spray
  • Ice cream scoop or cookie scoop
  • Large mixing bowl

Oh and a pro tip for cleaning the bowl with very sticky batter… rinse with very warm water and let soak for a few minutes. Then it will be easy to clean instead of scrubbing it off!

Ingredients

  • 1/2 cup Chocolate SunButter
  • 1/4 cup granulated sugar
  • 1 large egg
  • ¼ teaspoon salt
  • 2 tablespoons chocolate chips or chunks

Instructions

  1. Preheat the oven to 350°F. Line a small baking sheet with parchment paper or a silpat and set aside.
  2. Mix together the Chocolate SunButter, sugar, egg and salt until combined. The batter will be sticky.
  3. Fold in chocolate chips/chunks.
  4. Using an ice cream scoop or large cookie scoop, scoop the batter onto the parchment paper. Leave about 2-3 inches between cookies. You will make about 5 cookies.
  5. Bake for 12 minutes, until cookies are set and appear fully cooked. Let cool completely on the baking sheet before storing in an airtight container.
