Low Sugar Peach Pie Bars

My family is very lucky because we have 3 birthdays right at the kick off to summer. And that means a superfluous amount of summer desserts! Lucky me, because they’re my favorite! I mean, is there anything better than a cherry pie? Peach pie? Jumbo blueberry muffins with the juiciest summer bloobs? I think not!

Well, I don’t always want to make a whole pie and fuss with a crust and all that, so I take a short cut… I make BARS!

Peach Pie Bars are everything you love about peach pie – juicy peaches, that crust that’s kinda soaked in peaches, and a crumble topping. SO GOOD!

I made these Peach Pie Bars lower in added sugar because I find that with fruity desserts, it’s just not needed. We’re so used to dumping sugar in desserts that we don’t even think: does it really need that much sugar to be tasty, satisfying and delicious?

More often than not, recipes could use less sugar. So that’s what I sought out to do.

How to Make Low Sugar Peach Pie Bars

This recipe is quite simple to make. My 4-year old even helped!

First, you’ll prep the filling…

Mix together the peaches with brown sugar, cinnamon and some flour to absorb the excess liquid.

Next, you’ll make the crust and crumble topping.

You’ll mix together the flour, white sugar, cinnamon and salt. Then, you’ll add the butter and maple syrup. This is where things get tricky. You want to work the butter into the flour mixture, but you don’t want it to melt. Like a pie, you’ll want to work it until you have ‘pea-sized’ pieces of butter.

To assemble…

Transfer about 2/3 of the dough into the pan. Then add the peach filling. Finish by sprinkling the rest of the crumble topping on top.

Bake at 350°F for 30 minutes.

Let the bars cool completely before cutting.

For the peach pie filling:

  • 6 cups sliced peaches (about 4 peaches), skin on
  • 2 tablespoons brown sugar
  • 1 ½ tablespoons white whole wheat flour
  • 1 teaspoon cinnamon

For the crust and crumble topping:

  • 2 2/3 cups white whole wheat flour
  • 1/4 cup white sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup softened butter or vegan substitute
  • ¼ cup maple syrup

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine peaches, brown sugar, flour, and cinnamon. Toss together until peaches are coated and no clumps remain. Set aside.
  3. In a separate large bowl combine the white whole wheat flour, sugar, cinnamon and salt. Mix with a fork. Then add the butter and maple syrup. Mix until pea-sized pieces form. I find it easier to use (clean) hands over a utensil. The dough should be able to stick together.
  4. Press about ⅔ of the dough into an 8-by-8-inch baking pan lined with parchment paper.
  5. Pour the peaches over the crust. Distribute evenly so no obviously large empty pockets remain.
  6. Crumble the remaining dough over the peach filling.
  7. Bake for about 30 minutes, until the top is golden brown.
  8. Let the bars cool before cutting. Best stored in the fridge for up to one week.
