When you think of traditional fall flavors, what comes to mind?

For me, apples and pumpkin come to mind. Specifically baked apples and pumpkin goodies!

Of course along with apples and pumpkin come warm cinnamon and ginger too.

And that’s exactly what this pumpkin apple bread has to offer… with a gluten free twist!

I used oat flour for this 1-bowl fall quick bread so it’s inclusive for those with gluten sensitivities.

Have you ever combined apples and pumpkin in a baked bread?

To be honest, it’s not the first combination that comes to mind for me, but we had SO MANY APPLES, and I wanted to add an extra hint of sweetness to this bread.

Ingredients to Make Oat Flour Pumpkin Bread

You’ll need 12 ingredients to make this oat flour pumpkin apple bread. I usually try to limit my new recipes to just 10 ingredients, but you probably have *most* ingredients in your pantry!

You’ll need:

  • Pumpkin puree – It’s been hard to find pumpkin puree this season, but I hear there’s not a shortage… the crops were just a bit delayed! I order my pumpkin puree from Thrive Market (affiliate link) most of the time (there’s a 2 can limit right now)
  • Eggs – I tried to make this recipe egg-free, but the texture just wasn’t quite right. It was too dense. The eggs add some air and lift into this quick bread.
  • Unsweetened applesauce – You can make this recipe oil-free with applesauce for some amped up apple flavor too!
  • Milk or non-dairy alternative – I actually didn’t have either one day and tested this recipe with water, which also works!
  • Maple syrup – The combination of liquid and non-liquid sweeteners works really well in this recipe.
  • Brown sugar – Yes, you need some non-liquid sweetener. If you wanted to swap in coconut sugar you can.
  • Oat flour – see tutorial below!
  • Cinnamon – you can’t have a pumpkin or apple baked goodie without cinnamon!
  • Ground ginger – you could swap out the cinnamon + ground ginger for pumpkin pie spice
  • Baking powder
  • Salt – I don’t really count this one as an ingredient!
  • Chopped apples – you only need about 1/2 cup. I suggest a small chop for best results.
  • Chocolate chips – because duh, pumpkin bread is not pumpkin bread without chocolate chips in my house!

How to Make Pumpkin Apple Bread with Oat Flour

You only need 1 bowl and a handful of pantry staple ingredients to make this pumpkin quick bread.

During quarantine everyone had a minute with homemade sourdough and baking bread, but I never got into it because 1) I have a 1 year old, and 2) I don’t have patience to let bread proof and rise.

I’m also obsessed with using oat flour for baking, so I’m excited to share this seasonal quick bread. Here’s how to make it:

First mix together all of your “wet” ingredients. This includes the pumpkin puree, eggs, applesauce, milk, and maple syrup.

Then mix in the brown sugar. Be sure to get out any clumps!

In the same bowl, mix in the dry ingredients. This includes your oat flour, baking powder, and spices.

Last, you’ll fold in the apple and chocolate chips before pouring the batter into your loaf pan and baking.

How to Make Oat Flour

It could not be easier to make oat flour. Simply pour oats into a high-powered blender (like a Vitamix) or food processor and process until a flour-like consistency forms.

Oat Flour Pumpkin Apple Bread

Ingredients

  • 1 15oz can pumpkin puree (not pumpkin pie filling)
  • 2 eggs
  • 1/3 cup unsweetened applesauce
  • 1/4 cup milk or non-dairy alternative
  • 2 tablespoons maple syrup
  • 1/2 cup brown sugar (not packed)
  • 3 cups oat flour
  • 1 tablespoon cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup finely chopped apple
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350F. Line a loaf pan with parchment paper.
  2. In a large bowl mix together pumpkin puree, eggs, applesauce, milk, and maple syrup until well-combined.
  3. Add brown sugar and mix until no clumps remain.
  4. Add oat flour, cinnamon, ground ginger, baking powder, and salt. Mix until just combined. Do not over mix. Fold in apples and chocolate chips. Add additional chocolate chips on top, if you wish.
  5. Transfer batter to the lined loaf pan. Bake for 40 minutes, until a toothpick comes out clean. Let cool completely before slicing.
