Let me start off this blog post by saying… Do you know how freakin’ hard it is to photograph homemade chocolate candies that kinda look like you know what but taste like a DREAM?!

Imagine a creamy and chewy “caramel” filling covered in smooth chocolate… SO GOOD!

OK, now that we got that out of the way…

I really hope you try these Nut Free Healthy Snickers Bars. They are OUT OF THIS WORLD delicious!

I know I’m calling them a “Snickers” bar, but truth be told, I’ve never had a Snickers. So in reality, these very well may be nothing like a Snickers bar.

However, these Nut Free Snickers Bars are exactly what I imagine a Snickers bar would be.

There’s a hybrid caramel/nougat filling with crunchy sunflower seeds mixed in, all wrapped up in a chocolate shell.

Basically, these candies are delicious, low in added sugar, and a MUST TRY, in my opinion!

You only need 6 ingredientsto make these Nut Free Healthy Snickers Bars. And that includes the flaky sea salt on top!

Dates are the base of the caramel-like filling.

Did you know you can make a creamy caramel-like consistency from dates? YUP, naturally sweetened “caramel” too! Dates are full of vitamins, minerals, some fiber, and even a tad of protein! I highly suggest using super soft dates for the best results. If your dates feel a tad hard or tough, soak them in water for about 10 minutes before you blend together.

SunButter adds creaminess and healthy fats to the caramel.

To get a more robust nougat and caramel consistency, you must add SunButter to the date mixture. It’s OUT OF THIS WORLD good! Plus, it adds healthy fats, which help balance out the natural sugars in the dates.

Sunflower seeds add a bit of crunch!

I mixed sunflower seeds into the date/SunButter “caramel nougat” to add a bit of crunch, like a Snickers Bar has from the peanuts. You can omit this for a more Milky Way-like bar, but I think the crunch is good! You can also omit the sunflower seeds and add in crisped rice.

Mini chocolate chips mixed with a drop of coconut oil melt the best for a smooth coating.

This is my secret to get the smooooothest chocolate shell. Mix the chocolate chips with liquid coconut oil to melt. Then microwave in 30-second intervals until silky smooth. Be sure to mix in-between each interval.

Flaky sea salt is a MUST on top!

The bars are just too sweet without the balance from the salt. Flaky sea salt is preferred because the salt crystals are larger, but any drop of salt will do the trick taste-wise.

Special Kitchen Tools to Make This No Bake Candy Bars

A food processor or high-powered blender is essential to get the right consistency for your “date caramel.” I actually think the recipe comes out better when you use a food processor though. A good food processor really lets your dates and SunButter blend up into a golden sticky caramel consistency.

A silpat, or silicone baking mat, is also a good idea to ensure your sticky caramel doesn’t stick to the tray. This just makes it a little bit easier (even than parchment paper), but it’s not 100% necessary!

How to Make Nut Free Healthy Snickers Bars

OK, now let’s get to the good stuff – how to make Nut Free Healthy Snickers Bars. It’s honestly SO easy!

First, we make the date and Sunbutter caramel slash nougat. Process your dates with the SunButter and warm water. You may need to pause to scrape down the sides of the container to ensure it’s well combined.

First the date caramel is going to form into a big blob. You should have enough water to thin it out just enough so that it can still be formed into little “logs” and a candy shape. If you thin it out too much then you won’t be able to adequately form your candy.

Next, mix the date caramel with sunflower seeds to add a crunch. Now you have your filling.

Form your filling into a log form and place on a silicone baking mat. Freeze it until it hardens just a bit and is easier to work with.

Once the mixture hardens up a bit, coat the date filling in chocolate. Be sure to sprinkle with sea salt. Seriously, don’t forget that step!!!

Return to the freezer until the chocolate hardens, and voila – you have your no bake healthy dessert!

Nut Free Healthy Snickers Bars

1 ½ cup soft dates (if dates are not soft, soak in water)

¼ cup No Added Sugar SunButter

3 tablespoons warm water

¼ cup sunflower seeds

2/3 cup mini chocolate chips

1 teaspoon coconut oil

Flaky sea salt

Instructions

  1. In a high-powered food processor or blender (I find a food processor works better), pulse soft dates, SunButter, and warm water until a paste-like consistency forms. The dates will probably form into a ball in the food processor, so scrape down the sides of the canister and continue to pulse until smooth.
  2. Transfer the date mixture to a bowl and mix in sunflower seeds.
  3. With wet hands, form the date mixture into a log-like shape and place on a parchment paper-lined baking sheet. It will be very sticky. Freeze for 15 minutes.
  4. Melt chocolate chips with coconut oil in the microwave. Microwave for 30 seconds, mix together, then continue microwaving in 30 second intervals until completely melted and smooth.
  5. Cover the date “logs” with melted chocolate. Generously sprinkle with flaky sea salt. Return to the freezer until chocolate hardens, about 15 minutes.

Notes

Store in freezer for optimal caramel-like consistency.
