This may be my new go-to summer dessert I’m bringing to every single summer BBQ this year! I may even need to double the recipe because I know these bars are going to FLY!
Imagine a crumbly graham cracker crust with a gooey marshmallow center and hard chocolate shell giving you all the s’mores vibes without a campfire in sight (ya know, kid safety!). Plus, they’re sooo good cold. I know that may seem weird, but they’re oddly fan-freakin’-tastic straight from the fridge or freezer. Think frozen s’mores bars vibes on a hot day…
No Bake S’mores Bars are…
- Freakin’ DELISH
- Even better cold
- Made with just 6 ingredients
- No bake
- Great for any summer gathering (serious crowd pleaser!)
If you can’t tell I’ve been on a huge no bake dessert roll (see my latest Icebox Cake) because who likes to turn on the oven when it’s hot?! NOT ME!
Ingredients You’ll Need to Make No Bake S’mores Bars
You’ll need just 6 ingredients to make this easy dessert recipe. Yes, you can do it too if you don’t consider yourself a baker.
You’ll need:
- Butter
- SunButter
- Graham crackers
- Marshmallow fluff
- Chocolate chips
- Coconut oil
The crust of these s’mores bars use butter, SunButter and graham cracker crumbs.
Butter and SunButter are mixed together to add an extra SunButtery layer of flavor in these s’mores bars. A traditional graham cracker crust uses just butter and graham cracker crumbs, but by adding the SunButter you 1. Cut down on the butter used and 2. Add nutrients.
The filling is super easy and made from jarred marshmallow fluff or marshmallow creme.
I tested a version with plain mini marshmallows, but using the fluff makes the center super gooey – just what you get when you melt marshmallows for a real s’mores made over a campfire.
Smooth melted chocolate is layered on top to create a hard chocolate shell.
Obviously you cannot have s’mores without chocolate! Mixing mini chocolate chips and coconut oil creates the smoothest chocolate layer.
How to Make No Bake S’mores Bars
This is a no bake recipe, which means even you non-bakers can make it! There are just a few steps to get those perfect layers…
First, you’ll mix together the melted butter and SunButter and pour it into a large bowl full of graham cracker crumbs. This will form the graham cracker crust.
You’ll press this mixture into an 8 x 8 baking dish lined with plastic wrap or parchment paper. I find plastic cling wrap easier to use because it sticks to the corners. Parchment paper can pop up (even if it’s clipped down), which means you won’t get a clear margin in the corners.
Once you press down the crust you’ll dollop marshmallow creme on top. Obviously it’s very sticky, making it hard to spread evenly (hence the dollops). However, if you shake the baking dish gently you’ll get it to flatten out. I also really like the unevenness of the bars, but hey, that’s me!
Next, you’ll melt chocolate chips with coconut oil in the microwave in 30-second intervals. This is the easiest way to melt chocolate. Adding the coconut oil (which is liquid when warm) creates the smoothest result. You’ll pour the melted chocolate over the top of the marshmallow fluff layer.
Last, top with a sprinkle of flaky sea salt. It’s 100% necessary to balance out the sweetness of the bars.
How should you store these no bake bars?
Personally, I love these bars cold, so I like to store mine in the fridge or even freezer. Maybe I’m weird like that though, so you can also store them at room temperature in an airtight container. However, if you live in a hot climate and your house gets hot and humid this may not be the best idea.

No Bake S’mores Bars have a crumbly graham cracker crust with a gooey marshmallow center and hard chocolate shell on top. This no bake summer dessert is so easy to make with just a few simple steps and a handful of ingredients.
Nut Free, Egg Free, Dairy Free
Ingredients
- 2 cups graham cracker crumbs (about 2 packs of graham crackers)
- 3 tablespoons butter, melted
- 1/2 cup SunButter
- 2/3 cup marshmallow fluff/creme
- 1 cup mini chocolate chips
- 1 teaspoon coconut oil
- Flaky sea salt
Instructions
- Line an 8×8 baking dish with plastic wrap. Set aside.
- Prepare the graham cracker crust. Add the graham cracker crumbs to a large bowl. In a small bowl mix together the melted butter and SunButter. Stir the butter and SunButter mixture into the graham cracker crumbs. Press the graham cracker mixture into the 8×8 baking dish. Press down with your (clean) fingers to create an even layer.
- Drop dollops of marshmallow fluff on top of the graham cracker crust. Let sit for a few minutes, then gently shake the baking dish so the marshmallow fluff spreads out. It does not need to fully cover the crust.
- In a small bowl melt the chocolate chips with coconut oil in 30-second intervals, stirring in between, until chocolate is fully melted. Pour on top of the marshmallow fluff. Again, gently shake the baking dish so it flattens on top. Sprinkle with flaky sea salt on top and/or additional graham cracker crumbs. Refrigerate for at least 30 minutes, or ideally overnight. Cut into 16 squares. Enjoy!
