I am not typically one for “protein desserts,” but this recipe may have changed my mind.
The other night my 4.5 year old son was asking to look at dessert videos online. To kill two birds with one stone I typed in #healthydesserts to see what my clients see when they search for that (it had come up in a client session). I was immediately inundated with baked oats recipes. And while I love oatmeal for breakfast, I just don’t have time to make the single-serve baked oatmeal that looks like cake in the morning for my kids. We’re in a rush!
But most of the recipes we saw looked like CAKE, so I decided to use the same concept in this SKILLET CHOCOLATE CAKE FOR TWO!

Here’s my thoughts about “HIGH PROTEIN DESSERTS…”
I love them! There’s nothing wrong with eating a dessert or snack that’s 100% satisfying, but also ADDS a bit more nutrition to your day.
But the key is that it needs to be just as SATISFYING as the OG dessert.
This high protein chocolate cake isn’t chalky from protein powder. It’s just as fluffy as my birthday cake. It’s *moist*, packed with chocolate flavor, and every bit as decadent, to me, as any other chocolate cake.
Think about ice cream… sure, you could eat an entire pint of the “healthier” Halo, but do you actually enjoy the FLAVOR + TEXTURE? Or would you rather a smaller portion of real deal ice cream?
For me, those lighter ice creams just aren’t satisfying, so it’s not worth me eating the “healthier” version.
Of course, we all have different taste preferences, so only YOU are able to decide what’s actually satisfying to you.
Now back to this High Protein Chocolate Cake for Two…
I made this dessert for two because:
- Valentine’s Day is coming up, and
- Sometimes (most of the time if you’re me), you don’t want to bake an entire cake… or WAIT for an entire cake to bake.
This double portion cake is the perfect amount to fully enjoy your dessert.

Ingredients You’ll Need to Make High Protein Chocolate Cake for Two
You’ll need less than 10 ingredients to make this protein-packed chocolate cake…
- Oat flour
- Granulated sugar
- Baking powder
- Collagen protein powder
- Unsweetened cocoa powder
- One large egg
- Milk (dairy or non-dairy)
- Chocolate chunks
- Salt
The recipe also includes salt, but I never list that as an ingredient, however, I also topped mine with additional flaky sea salt for an extra enhancement of that salty chocolate flavor.
Why do you use Collagen and not another protein powder?
This recipe specifically uses collagen because of its superfine powder-like texture and zero flavor. I love Vital Proteins because I trust them as a brand, so this is the one I use.
While the effects of collagen are still being studied, there are some initial observation that it can help support skin, nails, and joint health. Even more, 2 scoops provides nearly 20 grams of protein, without impacting the texture of the final product.
I find that many protein powders leave baked goods heavy and chalky. This collagen won’t do that.
Can you omit the collagen/protein powder?
YES! Because the consistency of collagen is superfine, it doesn’t replace any of the flour in the recipe. As a result, you can 100% skip it if you want to or don’t have any collagen at home.
Please note that this recipe will be drastically cut in protein if you skip adding it in, however, it’s still loaded with FIBER + some protein from the oats, egg and milk.
Can you make this egg-free?
I have not yet tested an egg-free version. In this recipe the egg provides structure and fluffiness. You can opt to use a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons warm water), however, the outcome may be more dense.
Oat flour??? Can I use almond flour? Or another flour?
This recipe specifically uses oat flour to boost the fiber and make it really affordable. A lot of flours on the market are super expensive. You can make your own oat flour in a blender or food processor (see below in the How to Make section for details).
Just 1/2 cup of oat flour adds 4.5 grams of fiber to this recipe and 6 grams of protein.
What type of milk did you use?
I used a non-dairy milk alternative for this recipe because that’s what I had in my house (I used Ripple), but you can use any dairy or non-dairy milk.
Can you make this sugar-free?
I suppose you can, but why? The entire DESSERT recipe contains 1 tablespoon of added sugar. That’s 1/2 tablespoon of added sugar per serving (or 6 grams of sugar).
Yes, it also contains chocolate chips, so if you wanted to omit the sugar and just add sweetness from them you can, but it won’t feel as decadent as a dessert… and remember, we don’t want to skimp on satisfaction!
Kitchen Tools You’ll Need to Make High Protein Chocolate Cake for Two
You only need a few tools to make this recipe. You’ll need:
- Mixing bowl
- Whisk
- Measuring cups and spoons
- Small cast iron skillet or large ramekin or small baking dish (all approximately 6″)
How to Make High Protein Chocolate Cake for Two
This recipe couldn’t be easier.
First, you’ll make oat flour.
To make oat flour, pulse oats in a high-powered blender or food processor until flour-like consistency forms. I like to make this in bulk and store in my refrigerator so I can pull it out when the craving strikes, without having to make oat flour every time.
You can also buy oat flour, like this.
Next, mix all of the ingredients together.
First, whisk the dry ingredients, including the oat flour, sugar, cooca powder, and baking powder.
Next, add in the wet ingredients, including the egg and milk.
Whisk until fully combined and no lumps remain. Then fold in the chocolate chunks, reserving a few for on top.
Bake at 325°F for 20 minutes.
That’s it! You’ll have a delicious, high protein chocolate cake! When the cake comes out of the oven I like to sprinkle flaky sea salt on top.

- Bake for 20 minutes until completely set. Let cool and enjoy with someone you love!
