We’re often told to eat the rainbow – and we should – but we can’t forget about another category of produce, WHITE produce, like MUSHROOMS!

Nowadays I can’t get enough mushrooms (especially on pizza), but believe it or not, I once had no taste for them at all. But I think that’s because I wasn’t having them prepared in delicious recipes like the recipes I’m sharing today.

Mushrooms are so versatile, thanks to the bountiful varieties, their meat-like texture, and umami flavor profile. From simply roasted or sautéed to finely chopped and added to meat dishes, mushrooms can play a starring role in your dinners.

Why are mushrooms healthy?

From a culinary standpoint, mushrooms have a unique texture compared to many vegetables.

There are many different types of mushrooms that can play a role in your cooking while making healthy mushroom recipes…

Portobello mushrooms are meaty and thick. They are a great stand-alone feature in many plant-based dishes, acting as a burger, burger bun, or even pizza crust.

White button mushrooms are younger than portobellos and cremini mushrooms and as such have a softer texture. they’re great for stuffed mushrooms, a stir fry, or to chop up and add to other dishes.

Cremini mushrooms have a slightly more potent flavor than white button mushrooms and blend well into chopped meat for burgers, meatloaf, and meatballs (lots of these recipes below!).

Shiitake mushrooms are my personal favorite! They are a woodsy variety with a hearty flavor and texture. Add them to a stir fry or even turn them into jerky or plant-based “bacon.”

Oyster mushrooms are now getting a tad fancy! They’re known to be delicate and work great sliced in many different dishes, or roasted whole with garlic and butter.

Enoki mushrooms aren’t what you typically think of when someone says mushrooms. To me, they remind me of sprouts, they’re super delicate and even crunchy. Add them to Asian-inspired dishes like a stir fry or soup.

Maitake mushrooms are woodsy and rich in flavor. The best maitake mushroom I ever had was actually fried whole at a restaurant, but at home they’re great sautéed with butter or oil and fresh herbs. Let the maitake mushroom shine as the center of the dish.
