Chocolate Strawberry Energy Bites

Energy bites may be my favorite snack ever. My only complaint is that they disappear so freakin’ quickly in my house!

My son loves them in his lunchbox, my husband loves them for an after-dinner sweet tooth quencher, and I love them for lunchtime dessert whenever I have them on hand.

This Valentine’s Day give the entire family something they’ll love and actually take out your food processor to make these delicious chocolate bites!

Ingredients You’ll Need to Make Chocolate Strawberry Energy Bites

You only need a handful of ingredients to make these bites, including:

  • Dates
  • Unsweetened cocoa powder
  • Freeze dried strawberries
  • Protein powder

Dates are a delicious base for energy bites because they’re naturally sweet, but also full of fiber, vitamins and minerals. I like to buy the negor dates at Costco, but you can really use any variety that’s soft. Don’t use hard dates. If your dates are a little harder than you’d hoped for, soak them in warm water for 15 minutes before making this recipe.

Freeze Dried Strawberries are my kids’ favorite nutrient-rich snack right now. Despite their love affair, they’ve gotten SO expensive at the supermarket. When I do buy them I like to make sure we use every crumb. This recipe is the perfect way to use the “strawberry dust” on the bottom of the bag. And before you ask, yes, I have a few bags that are nearly empty in my pantry for when we make this recipe.

Protein powder balances out the natural sweetness from the dates. I prefer to use an unflavored protein powder because it’s unflavored so you can focus on the true chocolate and strawberry flavor. However, if you have a chocolate protein powder you like, add a 1/4 cup of that instead of cocoa powder.

Then you’ll want to add the chocolate drizzle to be a little extra.

You’ll need:

  • Chocolate chips (I prefer dark chocolate, but use whatever you want)
  • Coconut oil
  • Crushed freeze dried strawberries
  • Flaky sea salt

How to Make Energy Bites

The easiest way to make date-based energy bites is to use your food processor.

Dump all of the ingredients in the processor bowl and pulse until the “dough” comes together in a ball.

You may need to pause to scrape down the sides of the bowl. If your dates are hard at all you may need to add some warm water to get a better, smoother consistency. Once the “dough” comes together into a ball, you’re good to roll into balls.

Adding the chocolate drizzle and crushed strawberries on top is optional, but it’s a fun touch… especially for Valentine’s Day!

The best way to melt chocolate

The easiest way to melt chocolate is to add chocolate chips to a microwave-safe bowl with coconut oil. The coconut oil helps make the chocolate super smooth. Stir every 30 seconds until smooth, then drizzle on top and sprinkle crushed freeze dried strawberries and flaky sea salt on top. You need the salt to help balance the sweetness.

Ingredients

Scale
  • 1 cup negor dates or medjool dates
  • ¼ cup cacao powder or unsweetened cocoa powder
  • ½ cup freeze dried strawberries
  • 1 serving unflavored protein powder
  • 2 tablespoons oat flour
  • For chocolate drizzle: ¼ cup dark chocolate chips + ½ teaspoon liquid coconut oil + flaky sea salt

Instructions

  1. Add dates, cacao powder, freeze dried strawberries, protein powder, and oat flour to a food processor. Pulse until the combination comes together in a ball. The dough will be sticky.
  2. Roll into balls.
  3. For the chocolate drizzle: Microwave the chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, mixing in between until fully melted. Drizzle melted chocolate on top and decorate with crushed freeze dried strawberries and a sprinkle of flaky sea salt. Enjoy!
