It’s been a few weeks since I’ve jumped right into the good ol’ What I Ate Wednesday eats, but I hope you liked the break I took last week to share some delicious food allergy friendly finds. I wake up around 7am on Tuesdays nowadays so that I can get a couple of hours of work in before I take my leisurely, #Iworkfromhome, workout class at a ripe 9:30am. I need a little something in me before I dance it out for an hour, but I try to keep it light… and caffeinated (see above + coffee).

This mornin’ I had a corn thin topped with sunflower seed butter, banana slices and some homemade granola I’ve been testing for a super exciting project!

After my class, I had a few errands to run, which included grabbing a new booch flavor to try…

Full disclosure — I’m 100% NEW (and soooo behind the trends) on the whole kombucha (fermented tea) thing, but I’ve been trying to reset my gut after being on a bunch of antibiotics and well, enter kombucha (#nutritionnerdtip: fermented foods contain PROBIOTICS, which are GREAT for your gut health…full post coming soon!). I digress, but I think all the ‘booch is hurting my belly (and I was only drinking about 1/4 cup daily!), so I’ve tried to lay off of it, but last week I was fully ON the ‘booch train.

I came home, showered, and was ready for an early lunch around 11:30am…

I made a great big salad with tuna, leftover roasted veggies and a couple more corn thins for the crunch factor. And I hydrated big time with H2O!

I had a bunch of work to get done, so it was mostly a lame-o desk day…womp womp. On Tuesdays I have my Research Applications class in the late afternoon/evening, so I obviously go packed with snacks…

I had 2 of these bites that I picked up at the GFAF Expo the other week with an entire water bottle (750ml). The blueberry flavor is SO delish and legit tastes like a blueberry muffin!

I got home from class around 7pm and cooked dinner for S and myself…

A quick take on my Shrimp Primavera with zoodles and a side of roasted brussels sprouts. If you haven’t tried this recipe it’s a MUST TRY! It’s SO easy to make and DELICIOUS! Plus, full of lean protein.

After dinner, S and I lounged on the couch and split this individual packet of nut free chocolate chips…

    2) I had NO idea that enjoy life made single-serve packages of their chocolate chips….now I need to get to the store ASAP!

    1. Haha now I’m allll about the 11:30 lunchtime! And the single-serve packs are new!! I haven’t seen them in stores yet (womp womp), but know they’re available online! 🙂
