What I Ate Wednesday 37
Hiiiyyyaaa friends!
I’m finnnalllyyy getting the glimpse of hope that the beginnings of fall may be coming to NYC and I could not be happier (cue little emoji woman in red dress dancing)! I’ve been knee deep in studying for my RD exam, getting geared up for classes, working, and wedding hopping last weekend and this upcoming weekend as well (Did you check out last weekend’s fun on snapchat?? ← Username: ChelseyAmer).
I got home from a girls wedding weekend late Sunday evening and was exhausted (like, fell asleep on the couch watching a movie with S at 7:45, exhausted), but I woke up feeling refreshed bright and early Monday morning and went straight to TJs to stock up on healthy deliciousness for the week….so let’s get to the EATS…
I’ve been back on my ‘cado toast game and enjoyed this morning with sunflower seeds and the BEST ever flor de sal from Portugal, with some sunshine raspberries and sliced tomato on the side. And coffee. Two cups of cafe (above).

I used so much brain power studying that I was hungry again 90 minutes later so I had another piece of avocado toast (this is the only bread I use for homemade avocado toast!) and totally forgot to snap a pic! I probably should’ve had more sunflower seeds or something with more protein, but I fed the cravings!
Then a few hours later, I took a break from studying to make a quick veggie scramble for lunch with every vegetable I bought this week — zucchini, red onion, ‘shrooms, 1 full egg + 1 egg white — on top of half of a high fiber tortilla and salsa and my new favorite ketchup on the side. With a sliced cuke on the side with a sprinkle of feta cheese and oregano.
I kept studying until mid afternoon and then paused to workout before class. In between my favorite 305 Fitness classes I re-started Tracy Anderson’s Metamorphosis program so I’m up to day 11-20 (level 2) muscular structure and I also did 30 minutes of dance cardio. Still love me a great at-home workout!
Before class I had a couple of snacks post-workout…sliced apple & sunflower seed butter and then a few pita chip & sunflower seed sammies…
I stayed hydrated during my 3 hour evening class with 750ml of water…ya know, not to get to science-y or specific!
Then I had dinner plans with my high school friends after class at a cute Italian place right in my neighborhood. I’ve been friends with some of these girls since elementary, middle and high school and even though we all live crazy busy lives, we try to get together at least once a month for a girls dinner. We shared a caprese salad as an app that I ate with some bread and olive oil…
And then I got branzino as my main course…cuz I’m fancy!
I came home late, ate a few grapes while I caught up with S as a sweet treat, and it was time for bed!
