Banana Bread Brownies
These Banana Bread Brownies are a hybrid between gooey banana bread and chocolatey brownies, with a healthier twist. Made with oat flour, this gluten free banana bread is more dense than your traditional banana bread, but not quite as fudgy as a brownie. You’ll have to taste it for yourself!

I’ve been on a banana bread kick. Specifically, an oat flour banana bread kick.
It started because my vegan banana bread is made with oat flour, which is good for lactation. As I’m nursing my son, why not enjoy a delicious snack that can also help boost your supply? Plus, it’s SO EASY to make in just 1 bowl. AND with no eggs, I could lick the bowl clean. #winning
True story: I hoard this to myself saying it’s “lactation bread.” And then sometimes I don’t even tell my husband I made a batch. OH WELL!
But after a few months, I got bored of my standard ol’ banana bread. I was legit making the same thing every week! Maybe it’s the exhaustion that my chocolate addiction was kicking in, so I wanted something with MORE CHOCOLATE.
And that’s when I thought of this new recipe…
Banana Bread Brownies!!
Consider these squares a hybrid between moist banana bread and chocolatey fudgy brownies. They’re not quite as bread-like as traditional banana bread. But also not as fudgy as a gooey brownie.
They’re just right in the middle!
And made with nourishing ingredients, in just one bowl!
Here’s what’s in these banana bread brownies…
- Bananas
- Coconut oil
- Vanilla extract
- Oat flour
- Water or milk
- Unsweetened cocoa powder
- Baking powder
- Salt
- Chocolate chips or chunks
I usually have most of these ingredients in my pantry, so I can always whip up a batch.
And did I mention it’s a crowd pleaser?
If you’re attending or hosting brunch, then you’ll want to bring these banana brownies. EVERYONE will love them. (Unless they don’t like bananas, which I just don’t understand!!)

How to make OAT FLOUR:
The key ingredient in these is OAT FLOUR.
I’ve been baking quite a lot with oat flour lately because it’s so easy to make (I order oats in bulk), it’s good for lactation (all lactation cookies have oats), and boosts the nutrition of whatever you’re making.
So here’s how to make oat flour: pour rolled oats into a high-powered blender or food processor. I use my Vitamix (like this one).
Blend until flour-like consistency forms.
Yes, it’s THAT simple.
Usually about 1 cup of oats = 1 cup of oat flour, but it really depends how fine you grind the oats.
How to make these chocolatey banana bread brownies:
It’s really too easy to make this sweet treat!
First, mash your bananas, and add the remaining liquid ingredients.
Then add the dry ingredients and mix together – but don’t overmix. You never want to overmix a batter!
Fold in the chocolate chips gently and pour into an 8-by-8 baking dish.
Bake for about 25-28 minutes, until the edges begin to pull away from the side of the baking dish.

Banana Bread Brownies
Ingredients
3 bananas, mashed (1 1/2 cups mashed banana)
1/4 cup coconut oil or another mild oil
1/4 cup water or milk
2 teaspoons pure vanilla extract
1 cup oat flour
1/4 cup + 1 tablespoon unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup chocolate chips or chunks (additional for topping)
Instructions
- Preheat oven to 350°F. Line an 8-by-8 baking dish with parchment paper and set aside.
- In a large bowl, mash bananas well. Add coconut oil, water or milk, and vanilla extract. Mix to combine.
- Mix in oat flour, cocoa powder, baking powder, and salt. Do not overmix. Fold in chocolate chips.
- Pour batter into your prepared baking dish and add additional chocolate chips, if desired.
- Bake for 25-28 minutes, or until edges brown and slightly pull away from the sides of your pan.
- Let cool completely before slicing to enjoy!
