Banana Bread Brownies

Ingredients

3 bananas, mashed (1 1/2 cups mashed banana)

1/4 cup coconut oil or another mild oil

1/4 cup water or milk

2 teaspoons pure vanilla extract

1 cup oat flour

1/4 cup + 1 tablespoon unsweetened cocoa powder

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup chocolate chips or chunks (additional for topping)

Instructions

  1. Preheat oven to 350°F. Line an 8-by-8 baking dish with parchment paper and set aside.
  2. In a large bowl, mash bananas well. Add coconut oil, water or milk, and vanilla extract. Mix to combine.
  3. Mix in oat flour, cocoa powder, baking powder, and salt. Do not overmix. Fold in chocolate chips.
  4. Pour batter into your prepared baking dish and add additional chocolate chips, if desired.
  5. Bake for 25-28 minutes, or until edges brown and slightly pull away from the sides of your pan.
  6. Let cool completely before slicing to enjoy!
