Over the years, I’ve realized something: some kitchen gadgets are totally worth it, and others just don’t cut it. I was never a kitchen gadget kind of person (case in point: the pressure cooker we got for our wedding and still haven’t used).

As much as I love the idea of helpful kitchen gadgets, I usually find it easier to chop something myself than whip out the mandolin, or as Tim Gun says, “make it work.”

So, when I got the opportunity to try some of OXO’s gadgets, I was a bit hesitant, but figured that with a baby on board, maybe these items would make my life easier and make it more exciting to add a salad to my plate… and I was right!

As a dietitian, you may expect that I absolutely LOVE salad, but this pregnancy hasn’t always been easy to add enough veggies to my plate (any other mamas-to-be feel the same?).

With the help of OXO’s Salad Dressing Shaker and Salad Spinner, I had SO much fun preparing one of my favorite go-to salads (this is seriously the best Greek salad!), that I started eating even more salad now!

Concentrate on color, get creative in the kitchen, and use quality ingredients and combinations to add tons of flavor to your bowl.

But the secret sauce to a delicious salad is definitely in the dressing. This red wine vinaigrette perfectly accompanies a classic Greek salad. It’s not overpowering and happens to be my husband’s favorite, so I make it at least once a week.

If you’re not making your own salad dressing, you’re seriously missing out. By DIYing, you can choose the exact ingredients you use, focusing on quality. And like they say, choose quality over quantity – let your ingredients shine!

California Olive Ranch’s Everyday Extra Virgin Olive Oil has so much flavor, you don’t need to add many more ingredients to round out your dressing. Balance out the oil with a tangy vinegar, creamy mustard, some spices, and voila, you’re done!

The Best Greek Salad with Red Wine Vinaigrette

Yield: 4 servings

Ingredients

    For the Greek Salad:
  • 2 heads romaine, roughly chopped
  • 1 cup sliced cucumbers (cut into half-moons)
  • 1 cup sliced tomatoes (about 1-2 medium tomatoes)
  • 1 bell pepper, thinly sliced
  • 1/2 cup thinly sliced red onions
  • 1/4 cup Kalamata olives
  • 4 ounces feta cheese, cubed
  • 1/4 cup fresh dill, roughly chopped
  • 1 tablespoon dried oregano
  • For the Red Wine Vinaigrette:
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 tablespoon dried oregano
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 1/4 cup California Olive Ranch Extra Virgin Olive Oil

Instructions

  1. Wash and spin the salad in the OXO Salad Spinner until dry. Set aside. Add remaining salad ingredients. Set aside.
  2. Add ingredients for the red wine vinaigrette to your OXO Salad Dressing Shaker. Shake until combined.
  3. Toss salad in half of the dressing. Taste, and dress according to preference. Enjoy!
