How to Make Oat Flour for this recipe
Oat flour is one of my favorite ingredients to use when baking because it captures all of the nutritious benefits of oats in a delicious baked treat!
It’s SUPER simple to make oat flour… You’ll pulse oats in a high-powered blender or food processor until you reach flour-like consistency.
That’s it!
Typically you’ll need a 1:1 ratio. So if you need 1.5 cups of oat flour (like this recipe calls for), you’ll pulse 1.5 cups of oats.
I like to use my Vitamix, but you can use any food processor. You can store oat flour, just like regular flour, so I always suggest doubling the amount you need for next time!
How to Make Zucchini Oatmeal Bars
This recipe is quite easy to make, except 1 cumbersome part…. you have to shred your zucchini!
I use a grater, like this one, to finely shred the zucchini. The key to using zucchini in baked goods is to squeeze out as much excess moisture as possible. You can use a cheesecloth or a dish towel and just squeeze over the sink.
Then you’ll combine all the ingredients in a large bowl. Mix together, add in the zucchini and chocolate chips, then pour into a prepared 8-by-8 baking dish. Bake and 27 minutes later you’ll have delicious bars!

Ingredients
- 2 large bananas, mashed (about 1 cup)
- 1/4 cup melted coconut oil
- 2 teaspoons pure vanilla extract
- 1/4 cup milk or non-dairy milk alternative
- 1 ½ cups oat flour (see note for how to make)
- ¼ cup chia seeds (use code CHELSEY for 20% off)
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 cup shredded zucchini, excess water squeezed out
- ⅓ cup dark chocolate chips
Instructions
- Preheat the oven to 350°F. Coat an 8×8 pan with oil or parchment paper and set aside.
- Add mashed bananas, coconut oil, vanilla extract, and milk to a large bowl and mix to combine.
- Mix in the oat flour, chia seeds, baking powder, cinnamon, and salt and mix with a spoon until just combined. Do not overmix.
- Fold in the zucchini and chocolate chips, mixing just until combined.
- Pour batter into your prepared pan. Add some additional chocolate chips on top, if you’d like.
- Bake for ~27 minutes, or until edges brown and slightly pull away from the sides of your pan. Let cool completely before slicing to enjoy!
Notes
How to make oat flour:
Grind rolled oats in a food processor or high-powered blender until flour-like consistency forms to make oat flour. You’ll need approximately 1 1/2 cups of rolled oats to make 1 1/2 cups of oat flour.
