Zucchini Oatmeal Bars with No Added Sugar

Zucchini Oatmeal Bars are a great 1-bowl after school snack to share with your kids. Naturally sweetened with bananas and made with no added sugar, this is a nourishing snack you can feel good serving your kids, and enjoying right alongside them!

Ingredients

  • 2 large bananas, mashed (about 1 cup)
  • 1/4 cup melted coconut oil
  • 2 teaspoons pure vanilla extract
  • 1/4 cup milk or non-dairy milk alternative
  • 1 ½ cups oat flour (see note for how to make)
  • ¼ cup chia seeds (use code CHELSEY for 20% off)
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 cup shredded zucchini, excess water squeezed out
  • ⅓ cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F. Coat an 8×8 pan with oil or parchment paper and set aside.
  2. Add mashed bananas, coconut oil, vanilla extract, and milk to a large bowl and mix to combine.
  3. Mix in the oat flour, chia seeds, baking powder, cinnamon, and salt and mix with a spoon until just combined. Do not overmix.
  4. Fold in the zucchini and chocolate chips, mixing just until combined.
  5. Pour batter into your prepared pan. Add some additional chocolate chips on top, if you’d like.
  6. Bake for ~27 minutes, or until edges brown and slightly pull away from the sides of your pan. Let cool completely before slicing to enjoy!

Notes

How to make oat flour:

Grind rolled oats in a food processor or high-powered blender until flour-like consistency forms to make oat flour. You’ll need approximately 1 1/2 cups of rolled oats to make 1 1/2 cups of oat flour.
