What is white whole wheat flour?
White whole wheat flour is 100% whole wheat flour made from light colored wheat that gives it a fluffy, soft texture most similar to all-purpose flour.
When baking with whole wheat flour, the result is usually dense and tough. Using white whole wheat flour takes care of those problems.
Nutritionally speaking, white whole wheat flour contains 4 times as much FIBER as all-purpose flour, a similar amount as regular whole wheat flour. When most Americans do not eat enough fiber, this is HUGE!
You get the same texture and mild flavor as using all-purpose flour, but with so much more nutrition, so it’s worth ordering online if you don’t see it in your supermarket!
Can you use all-purpose flour?
You sure can! You’ll get the same great results, even if they don’t contain as much fiber.
Can you make this vegan?
This recipe has not been tested with an egg substitute, but you can use a milk alternative to make this recipe dairy free, if needed.
How to Make Whole Wheat Apple Muffins
What makes this muffin recipe easy is that it can be made in ONE BOWL!!
First, whisk together the dry ingredients, including flour, baking soda, and salt.
Make a little well in the middle to add your wet ingredients, including oil, milk, applesauce, brown sugar, vanilla extract and eggs. The batter will be thick before you add the eggs, then will be easier to mix.
Now fold in the apples. It’s important to use finely chopped apples because if your apple chunks are too big it will be difficult for the muffin to stay together.
The last step before baking is to scoop the batter into a muffin tray. I opted against muffin liners (my kids always have trouble with them, so I skipped that step) and generously sprayed the muffin tin with nonstick cooking spray instead.
I always use a 2-ounce ice cream scooper to transfer the batter into the muffin pan. A generous scoop is the perfect amount to fill your muffin tins up 3/4 of the way to the top (to leave room for them to grow in the oven).
To add a little more pizazz to the muffins I sprinkled some additional chopped apples and cinnamon on top before baking.
Bake for just 18 minutes, and you’ll have delicious muffins in no time!
