This banana bread recipe just so happens to be vegan. With the current egg shortage, it’s extra helpful, even if you don’t normally partake in vegan baking.
Even more, this vegan banana bread recipe is made without nuts and without oil or butter substitutes.
HOWEVER, it’s just as *moist* and delicious as ever before, so don’t go thinking that just because you skip the butter, oil, and eggs that you have a dry, crumbly loaf. NOPE, no dry loaves here!

Ingredients to make Vegan Banana Bread without oil
Since you don’t need eggs or oil, what do you need? Just 8 simple ingredients…
- Bananas (obviously) – the browner, the better for added sweetness
- Vanilla extract
- Non-dairy milk alternative
- No sugar added applesauce
- White whole wheat flour or whole wheat pastry flour
- Baking soda
- Cinnamon
- Chocolate chunks
Let’s talk about white whole wheat flour.
Unlike regular whole wheat flour, white whole wheat flour is lighter to bake with. The result is a fluffier loaf that’s not as dense as if you were to use regular whole wheat flour. But make no mistake… white whole wehat flour is 100% whole wheat flour so it’s still packed with tons of fiber, vitamins and minerals.
Per 1/4 cup, white whole wheat flour contains:
- 3 grams fiber
- 4 grams of protein
That means this loaf has 18g fiber and 24g protein from the flour alone!
Why doesn’t this recipe use oil?
Oil is typically a mainstay in muffins and breads, like banana bread, but it’s just not necessary in this recipe. The bananas and applesauce provide enough moisture that makes oil unneeded. However, if you don’t have applesauce and would like to use oil, you can use 1/3 cup + 1 tablespoon of mild oil (like sunflower oil, vegetable oil, coconut oil) instead of applesauce.
How to Make This Banana Bread Recipe without Eggs
There’s currently an egg shortage, so you’ll want to save this vegan banana bread recipe even if you’re not a vegan so you can save your eggs for yummy scrambles where you can really taste them!
This recipe couldn’t be simpler: mix all your ingredients in a large bowl, pour into a loaf pan, and bake!
Seriously, it’s that simple. But here are some recipe notes:
- Mash the bananas well. Otherwise you won’t have uniform texture.
- Measure the bananas. Although the recipe calls for 3 small to medium bananas, my definition of “small to medium” may be different from yours. You should have about 1 cup of mashed bananas for this recipe.
- The amount of applesauce listed is what’s in an individual cup you may keep on hand for your kids (I always have them on hand!)
- White whole wheat flour is recommended, but you can also use all-purpose flour or whole wheat pastry flour. I have not tested this recipe with other flours so I do not know if they will work out as well.
- It’s easier to cut the loaf with chocolate chips > chunks, but I prefer the chunks.

Ingredients
- 3 small to medium bananas, mashed, about 1 cup mashed
- 1/4 cup light brown sugar
- ½ tablespoon pure vanilla extract
- 2 1/2 tablespoons non-dairy milk
- ⅓ cup + 1 tablespoon no sugar added applesauce
- 1 ½ cups white whole wheat flour or all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 1/2–3/4 cup chocolate chunks or chips
Instructions
- Preheat the oven to 350F. Spray a loaf pan with nonstick oil spray or line with parchment paper.
- Mash the bananas in a large bowl. Add the brown sugar, vanilla extract, milk, and applesauce. Mix to combine.
- Add the white whole wheat flour, baking soda, cinnamon and salt. Mix until just combined. Fold in chocolate chunks.
- Pour into a greased loaf pan. Bake for 40 minutes, until the top is golden brown and an inserted toothpick comes out clean. Let cool before slicing.
Notes
Wrap in foil to store in the refrigerator for up to 5 days.
