Vegan Banana Bread with No Oil

This Vegan Banana Bread with No Oil and no eggs is just as moist and delicious as any other loaf you’ll bake! Made with minimal added sugar, naturally sweetened with bananas and applesauce, and a nutritious boost thanks to white whole wheat flour, this loaf will disappear before you know it!

Ingredients

  • 3 small to medium bananas, mashed, about 1 cup mashed
  • 1/4 cup light brown sugar
  • ½ tablespoon pure vanilla extract
  • 2 1/2 tablespoons non-dairy milk
  • ⅓ cup + 1 tablespoon no sugar added applesauce
  • 1 ½ cups white whole wheat flour or all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1/23/4 cup chocolate chunks or chips

Instructions

  1. Preheat the oven to 350F. Spray a loaf pan with nonstick oil spray or line with parchment paper.
  2. Mash the bananas in a large bowl. Add the brown sugar, vanilla extract, milk, and applesauce. Mix to combine.
  3. Add the white whole wheat flour, baking soda, cinnamon and salt. Mix until just combined. Fold in chocolate chunks.
  4. Pour into a greased loaf pan. Bake for 40 minutes, until the top is golden brown and an inserted toothpick comes out clean. Let cool before slicing.

Notes

Wrap in foil to store in the refrigerator for up to 5 days.
