These SunButter Cookies made with oat flour are SO EASY to make and absolutely delicious! They have that bit of a chew you would expect from peanut butter cookies (but 100% nut free!), but also have a bit of a crisp around the edges.

Why Oat Flour?
To be honest, I wasn’t going to share this recipe as a stand-alone recipe, because I really just adapted this recipe for my Coconut Flour SunButter Cookies.
But I know some people are allergic to coconut flour, and to be honest, I haven’t been loving it lately, so it hasn’t been my flour of choice as of late.
Lately I’ve been loving oat flour for its versatility, nutrient profile, and ease. I always have oats around (and thank you to my Amazon subscribe and save I accidentally doubled up, I have BAGS AND BAGS of oats around!). And if you have oats, you can make oat flour.
How to Make Oat Flour
I really need to write a blog post just about how to make oat flour, but it’s really very simple.
- Pour oats into high-powered blender, like a Vitamix, or food processor.
- Blend until a flour-like consistency forms.
That’s it! I like to make a big batch and store it in a tupperware so it’s always ready when I want to make banana bread or these cookies.

How to Make SunButter Cookies with Oat Flour
This recipe is almost as easy as making oat flour!
Mix together SunButter, eggs, and brown sugar in a large bowl. Then add oat flour and salt. Mix until uniform consistency forms. That’s your dough!
Roll the dough into 2-inch balls. Place on a large baking sheet and flatten slightly with the palm of your hand.
Use a fork to make a criss-cross design. Bake for 10-12 minutes (11 minutes was the sweet spot in my oven) at 400F, until lightly browned and crisp at the edges.
But here’s the key… after you remove the cookies from the oven, don’t remove them from the baking sheet!!! Let them cool for at least 10 minutes on the baking sheet before transferring them to a plate or cooling rack.
Oh and one more tip – I highly suggest making these the day of or just one day before you plan on serving them… they’re just better when fresh! Enjoy…

Ingredients
- 1 cup SunButter
- 2 large eggs
- ⅓ cup brown sugar
- ¾ cup oat flour
- ¼ teaspoon salt
Instructions
- Preheat oven to 350°F.
- In a large bowl mix together SunButter, eggs, and brown sugar. Then add oat flour and salt and mix until combined.
- Roll dough into 2-inch balls. Press down slightly with the palm of your hand. Create a criss cross pattern (as shown in photos) using a fork.
- Bake for 11 minutes, until golden at the edges. Let cool for at least 10 minutes on the baking sheet before transferring to a cooling rack. Enjoy!
