If you think of alllll the vegetables (seriously, ALL of them…), what do you think is the most underrated veg out there?
Of course this is a bogus question with no real answer, but I think it’s CABBAGE!
People never forget to pick up a head of lettuce, but always seem skim over this affordable, accessible, and crunchy veggie when perusing the aisles of the supermarket. Well, let’s put an end to this because cabbage is king! Especially in the summer!
When you’re sick of lettuce, cabbage is a great alternative.
Cabbage is a part of the Brassica family of vegetables, AKA cruciferous vegetables. Some cousins of cabbage include broccoli, cauliflower, brussels sprouts, kale, and mustard greens. If you’re anything like me, these veggies give you mega bloat (they can be harder to digest than other veggies like greens, peppers, mushrooms, etc.). But they taste soooo good and are so good for you!
If you’ve ever cooked any of these veggies, you know the sulfur-ish smell they give off. This is a good thing!!!!

You could use any cabbage in this recipe (green cabbage, Napa cabbage, Chinese cabbage, etc.), but I’m a fan of red cabbage. Not only is it prettier to look at (hello, that color!), but it really pops on your plate!
And while I don’t like to judge a book by its cover, red cabbage has some serious substance to it too…
Deep purple veggies are a potent source of antioxidants called anthocyanins. These help scavenge free radicals (substances that can cause damage to your cells).
So essentially, the more pretty colored foods you eat, the more variety of antioxidants you’ll consume and the healthier you’ll be (in theory).
So clearly you can feel good about eating this recipe, but how does it TASTE?!
Let me tell you… it’s FULL of flavor and texture. Crunchy cabbage is perfectly juxtaposed with juicy blueberries and grapes, with a bit of tang from the dressing. You have a little bit of everything going on, but it’s not too much… juuuuust right!

How to serve this cabbage slaw…
While I think this slaw is great on its own as a side dish for your next BBQ or picnic, it’s also a great salad swap. Move over boring salad made from romaine lettuce and tomatoes and try this instead. It takes the same 5 minutes to throw together!

You can also prep this slaw at the beginning of the week as part of food prep and pack it for lunches for a few days. Since cabbage is sturdier than lettuce, it really won’t become too soggy. If you’re still unsure, you can keep the dressing on the side and add it in each morning.

Tangy Red Cabbage and Blueberry Slaw
Tangy, crunchy, and fruity, this Red Cabbage and Blueberry Slaw is an easy side dish to throw together for your next BBQ or as a make-ahead lunch that keeps well in the fridge all week long (just add your favorite protein!).

Ingredients
- 6 cups shredded red cabbage
- 1/2 cup chopped flat-leaf parsley
- 1 cup blueberries
- 1/2 cup halved red or purple grapes
For the dressing:
- 1/4 cup red wine vinegar
- 1 tablespoon olive oil
- 1 tablespoon Dijon mustard
- 1/2 tablespoon dried oregano
- 1/8 teaspoon sea salt
- 1/8 teaspoon black pepper
Instructions
- Add cabbage, parsley, blueberries, and grapes to a large bowl. Set aside.
- In a small bowl, whisk together red wine vinegar, olive oil, Dijon mustard, oregano, salt and pepper until uniform consistency forms.
- Toss slaw in dressing and let sit for 10 minutes. Enjoy with your favorite protein.
