Tangy, crunchy, and fruity, this Red Cabbage and Blueberry Slaw is an easy side dish to throw together for your next BBQ or as a make-ahead lunch that keeps well in the fridge all week long (just add your favorite protein!).

Ingredients

  • 6 cups shredded red cabbage
  • 1/2 cup chopped flat-leaf parsley
  • 1 cup blueberries
  • 1/2 cup halved red or purple grapes

For the dressing:

  • 1/4 cup red wine vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • 1/2 tablespoon dried oregano
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon black pepper

Instructions

  1. Add cabbage, parsley, blueberries, and grapes to a large bowl. Set aside.
  2. In a small bowl, whisk together red wine vinegar, olive oil, Dijon mustard, oregano, salt and pepper until uniform consistency forms.
  3. Toss slaw in dressing and let sit for 10 minutes. Enjoy with your favorite protein.
