I didn’t realize how often I would make my beloved green waffles when I first created the recipe (although I suppose it always happens that way…).

Green Blender Waffles are by far one of the most loved recipes by not only my family, but also your families as well. It’s the recipe I receive probably the most number of comments about…

Ever since I created this recipe, waffles have become a staple for my kids. At first, green waffles were the only way my son would eat a vegetable. Now, they’re definitely one of the few ways my daughter (almost 2) will eat a vegetable.

So I was looking to create a new recipe, and knew it had to be PINK, my daughter’s favorite! With her 2nd birthday around the corner, pink is on the brain!

I have to double or triple to recipe to have leftovers because my entire family eats ’em right up!

Ingredients to Make Pink Waffles

You’ll only need 8 ingredients to make these pink waffles, including…

  1. Bananas
  2. Oats
  3. Eggs
  4. Frozen cherries
  5. Steamed beets
  6. Ground flaxseeds
  7. Cinnamon
  8. Vanilla extract

Seriously, that’s it!

The base of the recipe is similar to most protein pancake recipes you’ll see online… bananas, oats, and eggs.

Bananas lend structure and the base of this recipe.

Eggs add bulk and protein to the recipe, plus a bunch of vitamins and minerals.

The oats balance it out and add fiber to keep you actually full.

Then we add the coloring – the frozen cherries and steamed beets.

The frozen cherries will make the waffles have a subtle cherry flavor (seriously, subtle). But they lend a bit of sweetness that I really enjoyed. And so did my kids. 

The beets are a bit earthy, but the waffles are still naturally sweetened with the bananas, so you don’t really taste them all that much.

Do you have to steam beets first?

Please do yourself a favor and buy packaged steamed beets from the refrigerated section of most grocery stores.

Kitchen Tools You’ll Need to Make Pink Waffles

You actually need a couple of kitchen tools to make these pink waffles. You’ll need:

  1. A high-powered blender or food processor. I used my Vitamix
  2. A waffle iron

I love these little Dash waffle irons that come in various shapes and imprints for different holidays, but you can also use a big waffle iron. I love this heart-shaped waffle iron for Valentine’s Day!

When I double or triple the recipe I tend to heat up every waffle iron I have to cut down on cooking time.

Steps to Make Pink Waffles

This recipe is so simple to make because the blender does the heavy lifting!

  1. Preheat your waffle iron
  2. Add all ingredients (except for the nonstick cooking spray) to a high-powered blender. (Yes, it’s THAT easy!) Blend until completely smooth.
  3. Now it’s time to cook the waffles! Spray the waffle iron with nonstick cooking spray. Pour about 1/4 cup of batter into the mini waffle maker, or 1/2 cup for a standard large waffle iron. Cook to desired doneness (I prefer about 2ish minutes).

Tips to Meal Prep these Waffles

Since I like to meal prep these waffles, I’ve come up with a few tips to help over the years. 

First, undercook the waffles a bit.

I usually microwave the waffles in the morning to heat them up for my kids and they can become tough if they’re overcooked. If you know you’ll be re-heating them, under-cook!

Let the pink waffles cool completely before storing them.

Calm down and let them sit out to cool. They’ll store and freeze better.

To reheat, ideally, heat them up in an oven, but if you’re in a pinch for time…

Place them on a plate in a single layer and cover with a damp paper towel. Reheat for 1 minute only!
